%20and%20I%20thought%20maybe%20that%20would%20be%20a%20good%20hearty%20base%20for%20my%20poached%20egg%20dinner.%20Easy,%20no%20muss,%20no%20fuss,%20and%20tasty.%20Oh%20my%20gosh%20was%20I%20right.%3C/p%3E%3Cp%3EI%20rinsed%20the%20kale,%20removed%20the%20stems%20and%20any%20particularly%20woody%20ribs,%20and%20tore%20it%20into%20pieces.%20I%20saut%C3%A9ed%20bacon,%20removed%20most%20of%20the%20fat,%20added%20a%20bit%20of%20olive%20oil,%20a%20couple%20of%20sliced%20cloves%20of%20garlic%20and%20a%20whole%20shallot,%20sliced%20thin.%20I%20let%20the%20onions%20and%20shallot%20soften%20for%20a%20minute%20or%20two,%20added%20the%20kale%20and%20let%20it%20wilt.%20When%20the%20kale%20had%20wilted,%20I%20poured%20in%20two%20cups%20of%20chicken%20stock,%20brought%20it%20to%20a%20boil,%20reduced%20the%20heat%20and%20let%20it%20simmer,%20covered,%20for%20about%2020%20minutes.%20At%20the%20end,%20I%20made%20a%20last%20minute%20decision%20and%20it%20changed%20everything.%20I%20sprinkled%20the%20kale%20with%20salt%20and%20pepper,%20and%20then%20splashed%20in%20about%20a%20tablespoon%20of%20sherry%20vinegar.%20This%20was%20AWESOME.%20I%20toasted%20a%20piece%20of%20bread,%20rubbed%20it%20with%20a%20clove%20of%20garlic%20and%20some%20butter,%20piled%20on%20the%20kale%20and%20added%20the%20egg.%20The%20garlic%20toast%20and%20the%20sherry%20vinegar%20put%20this%20over%20the%20top.%20It%20was%20surprisingly%20good,%20I%20was%20so%20excited.%3C/p%3E%3Cp%3ESurprise!%20You%20might%20like%20kale...%3C/p%3E%3Cp%3Eperfect%20for%20poaching...%3C/p%3E%3Cp%3Eperfectly%20poached%3C/p%3E%3Cp%3EBut%20usually%20it%20looks%20a%20bit%20more%20motley.%20The%20fresher%20the%20eggs%20the%20more%20cohesive%20the%20white,%20but%20usually%20when%20you%20put%20the%20egg%20into%20the%20water,%20some%20of%20the%20thinner%20white%20will%20set%20right%20away%20and%20look%20kind%20of%20wispy.%20The%20fresher%20the%20egg%20the%20less%20of%20the%20wispy%20stuff%20there%20will%20be.%20I%20usually%20just%20spoon%20it%20right%20out.%3C/p%3E%3Cp%3ESo%20there%20you%20have%20it.%20I%20have%20been%20eating%20eggs%20these%20days.%20And%20enjoying%20it.%20Here%20is%20the%20recipe%20for%20the%20kale.%20Because%20I%20couldn%E2%80%99t%20consider%20myself%20a%20food%20blogger%20without%20adding%20to%20the%20cacophony:%3C/p%3E%3Cp%3EIn%20a%20high%20sided%20saute%20pan%20over%20medium%20heat,%20brown%20bacon%20until%20crispy%20and%20fat%20has%20rendered.%20Remove%20bacon%20from%20pan,%20and%20discard%20all%20but%20two%20tablespoons%20of%20rendered%20fat.%20Add%20the%20olive%20oil%20to%20the%20pan%20with%20the%20bacon%20fat,%20and%20reheat%20over%20medium.%20Add%20garlic%20and%20shallots%20and%20cooked,%20stirring,%20until%20softened,%20about%202%20minutes.%20Add%20kale%20and%20a%20pinch%20of%20salt%20and%20pepper,%20and%20let%20kale%20wilt.%20Add%20chicken%20stock,%20bring%20it%20to%20a%20boil,%20reduce%20heat%20and%20cover,%20letting%20kale%20simmer%20for%2015-20%20minutes,%20until%20kale%20is%20silky,%20but%20before%20it%20gets%20mushy.%20The%20kale%20will%20lose%20the%20bitterness,%20and%20should%20taste%20rich.%20Turn%20off%20heat%20and%20add%20sherry%20vinegar.%20Sprinkle%20the%20bacon%20pieces%20over%20the%20top%20and%20serve%20as%20a%20side%20or%20over%20garlic%20toast%20with%20a%20poached%20egg%20for%20dinner.%3C/p%3E){kind=link}
