Ingredientes

  • 10 piece cardamom seeds
  • 1 1/2 c. water
  • 5 Tbsp. unsalted butter or possibly ghee
  • 1/2 c. sooji (semolina, see Note)
  • 1/3 c. sugar
  • 1/2 c. minced almonds, raisins and cashew nuts

Direcciones

  1. Shell cardamoms and fine-grind seeds. Add in shells and grnd seeds to water and bring to boil. Remove pan from heat and strain water, setting cardamom seeds and shells aside. Return pan to heat and keep cardamom-flavored water warm while assembling remaining ingredients.
  2. Heat butter in a heavy skillet. Add in sooji and cook on medium heat for 5 min, whisking till brown. Sprinkle sugar on sooji and immediately add in boiling cardamom-flavored water. Stand back because the warm water will sputter when mixed with sooji and sugar. Stir quickly, breaking up any lumps, till mix thickens, about 1 minute or possibly so. Reduce heat to low and stir vigorously, making sure halwa does not stick to bottom of skillet.
  3. Cook 1-2 more min. Remove skillet from stove, top mix with minced nuts and raisins. Serve warm.
  4. Note: Whole wheat flour can be substituted. Wheat flour halwa has a slightly more earthy flavor, but is not very different from sooji halwa.
