Indian Spiced Silverbeet And Potatoes

Ingredientes

  • 2 Tbsp. oil
  • 1 c. chopped onions
  • 2 Tbsp. chopped garlic
  • 2 Tbsp. chopped ginger root
  • 1/2 tsp grnd cumin
  • 1/2 tsp grnd coriander
  • 1/2 tsp grnd cardamom
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 bn white Silverbeet thinly sliced
  • 3/4 lb small new potatoes quartered
  • 1/2 c. vegetable broth
  • 2 Tbsp. lime juice
  • 1/4 c. minced cilantro

Direcciones

  1. Heat the oil in a large skillet over medium-high heat. Add in the onions and cook, stirring just till they start to soften, about 2 min. Add in the garlic, ginger, cumin, coriander, cardamom, salt and cayenne. Cook, stirring, till the garlic, ginger and spices are very fragrant, about 2 min.
  2. Add in the silverbeet, potatoes and vegetable broth and bring to a boil. Reduce the heat to low, cover and cook till the potatoes are tender, about 15 min. Stir in the lime juice and cilantro, then serve. Serve this with basmati rice.
  3. This recipe yields 4 servings.
