Receta Individual Fruit Cheesecakes

- Preheat the oven to 300 degrees.
- Cream the cream cheese and 1 c. sugar till light and fluffy. This can be done by hand or possibly mixer. Beat in the Large eggs and 1 tsp. vanilla.
- Spoon the mix into individual muffin tins, filling each muffin c. about two-thirds full. If not using a nonstick muffin tin, use paper liners.
- Bake for 40 min, then remove from the heat and cold. The cakes will tend to shrink into the muffin c.. This is normal.
- Combine the lowfat sour cream with the remaining 1/3 c. sugar and 1/2 tsp. vanilla, and top each cake with the mix. Return to the oven for 5 min. Cold, freeze, or possibly serve. Remove any paper liners before presentation.
- NOTE: if you use 1 teaspoonto top each muffin, this would make approx. 7 Tbsp., so buy fresh or possibly canned fruit accordingly.
