Receta Indoor Peppermint S’mores

I have dreams of not posting peppermint-chocolatey recipes this December, but it seems like again and again, I get sucked into the most delicious vortex ever. I can’t help myself. It’s always been my favorite flavor combo (unlike my friend Jeni who thinks it’s like eating chocolate after you brush your teeth, which, I’ve gotta say, also is not the worst thing in the universe. But her husband’s a dentist, so…)

Ever since I saw these marshmallows,

I don’t know if they’re ACTUALLY bigger than regular marshmallows, but they FEEL bigger. They remind me of being a little kid and discovering a bag of marshmallows in the pantry. I’ve had all sorts of fantasies about what I’m going to do with them and tossed around all sorts of ideas–sugar cookies, chocolate crinkle cookies, all sorts of messy, stressful projects. And then I realized that when it comes to marshmallows, I like to keep it simple, and what’s more simple than s’mores? It’s super easy to make one or 30 of these, they’re delicious hot, but they’re also not horrible at room temperature. This was the way.

You’re going to need the marshmallows…

Peppermint-flavored chocolate (I used Ghirardelli Peppermint bark, which has a layer of candy cane-speckled white chocolate and a layer of dark chocolate,

but you could use whatever you like best)…

and some chocolate graham crackers.

Now, I tried this in the oven and in the microwave and I actually ended up liking the microwave method better–they tend to get a little smokey in the oven and while I like that in regular s’mores, I found it a little weird and confusing with the peppermint ones. But you can do whichever method you like better and I won’t hate you, I promise.

Break desired number of graham crackers in half and place on a microwave-safe plate*. Place a marshmallow on top of each half

and place the plate in the microwave. Begin to microwave on high for about 30 seconds (the time will vary depending on how full your plate is) and keep a close eye on the marshmallows. Once they become very puffy, remove the plate from the microwave and quickly top each marshmallow with a piece of peppermint chocolate.

Top each chocolate with another graham cracker to make a sandwich and eat. Immediately.

*If you’d like, you can pop these under the broiler set to low for NOT very long (like mine didn’t make it 30 seconds without starting to singe). Generally, I like a smokey flavor to my s’mores, but it was kind of a weird with the peppermint and this time around, I preferred the microwave method.
