.%20Danielle%20and%20I%20lived%20together%20in%20college%20%20with%20some%20other%20friend%20and%20did%20a%20bit%20of%20cooking.%20Generally%20this%20was%20to%20the%20extent%20of%20making%20some%20boxed%20mac%20and%20cheese%20or%20a%20salad.%20We%20occasionally%20had%20%E2%80%9Cfancy%E2%80%9D%20meals,%20a%20weekly%20mandatory%20family%20dinner%20night,%20but%20for%20the%20most%20part%20our%20eating%20habits%20were%20sporadic%20and%20supplemented%20by%20takeout.%20After%20college%20things%20were%20different.%20We%20wanted%20to%20cook%20good%20food,%20but%20with%20both%20of%20us%20working%20long%20days,%20time%20was%20always%20lacking.%3C/p%3E%3Cp%3EDanielle%20was%20familiar%20with%20how%20to%20tame%20a%20crockpot,%20so%20I%20immediately%20surrendered%20to%20her%20expertise.%20The%20first%20recipe%20I%20remember%20making%20was%20Crockpot%20Chicken.%20I%20watched.%20She%20tossed%20the%20raw%20chicken%20into%20the%20crockpot,%20poured%20a%20little%20water%20to%20cover%20the%20bottom,%20added%20her%20customary%20heaping%20spoonful%20of%20minced%20garlic,%20sprinkled%20some%20salt%20and%20closed%20it.%20She%20set%20it%20to%20low,%20put%20her%20coat%20on%20and%20started%20heading%20to%20work.%20%E2%80%9CThat%E2%80%99s%20it?%E2%80%9D%20I%20wondered%20skeptically.%20But%20that%20was%20it.%20We%20came%20home,%20whipped%20up%20some%20mashed%20potatoes,%20steamed%20some%20green%20beans%20and%20sat%20down%20to%20the%20juiciest%20chicken%20I%E2%80%99ve%20ever%20tasted.%3C/p%3E%3Cp%3ENot%20only%20was%20that%20chicken%20the%20easiest%20recipe%20I%20made%20(even%20including%20my%20refinements%20over%20the%20years),%20but%20it%20gave%20me%20faith%20in%20crockpots.%20Since%20then%20I%E2%80%99ve%20made%20dozens%20of%20different%20crockpot%20recipes,%20and%20will%20certainly%20lean%20on%20it%20if%20I%20have%20some%20ingredients%20I%E2%80%99m%20not%20sure%20what%20to%20do%20with.%20%E2%80%9CJust%20toss%20it%20in%20the%20crockpot!%E2%80%9D%20But%20that%20one%20recipe%20I%20go%20back%20to%20time%20and%20time%20again.%20Given,%20it%E2%80%99s%20not%20the%20prettiest%20dish.%20It%E2%80%99s%20something%20you%20serve%20a%20hungry%20family,%20not%20dinner%20party%20guests.%20The%20meat%20is%20literally%20falling%20off%20the%20bone%20so%20you%20serve%20it%20right%20from%20the%20crock.%20Any%20attempt%20to%20get%20the%20full%20bird%20on%20a%20serving%20platter%20has%20resulted%20in%20complete%20and%20utter%20failure.%20And%20admittedly%20you%20aren%E2%80%99t%20going%20to%20get%20that%20brown%20crisp%20skin%20you%20would%20if%20roasted,%20but%20delicious%20doesn%E2%80%99t%20need%20to%20be%20beautiful.%3C/p%3E%3Cp%3ECrockpot%20chicken%20used%20to%20be%20a%20monthly%20staple,%20from%20my%20days%20in%20Philly,%20though%20my%20life%20and%20marriage%20in%20Brooklyn.%20But%20for%20some%20reason,%20a%20few%20years%20ago%20I%20stopped%20making%20it.%20There%20was%20no%20reason,%20I%20just%20forgot.%20And%20then%20a%20few%20weeks%20ago,%20while%20at%20the%20Park%20Slope%20Food%20Coop,%20frantically%20trying%20to%20come%20up%20with%20a%20menu%20for%20the%20week,%20I%20found%20myself%20starting%20at%20a%20case%20of%20whole%20chickens%20and%20thought%20why%20not?%20During%20the%20meal,%20my%20husband%20got%20up%20for%20more%20(I%20think%20his%20third%20helping?)%20and%20commented%20on%20its%20excellence.%20%E2%80%9CHow%20come%20you%20never%20make%20this%20anymore?%E2%80%9D%20And%20I%20just%20looked%20at%20him.%20I%20have%20no%20idea.%3C/p%3E%3Cp%3ERinse%20your%20chicken%20with%20cold%20water,%20remove%20any%20giblets%20and%20pat%20dry.%20Stick%204%20sliced%20garlic%20cloves%20in%20the%20cavity%20and%20stick%20it%20in%20the%20crockpot.%20(I%20think%20I%20cook%20it%20breast%20side%20down,%20though%20I%20never%20knew%20the%20difference).%20Drizzle%20chicken%20with%20olive%20and%20sprinkle%20with%20minced%20garlic,%20salt%20and%20pepper.%20Rub%20ingredients%20into%20the%20skin%20well.%20You%20want%20the%20flavor%20to%20sink%20into%20the%20skin,%20not%20just%20have%20puddles%20of%20oil.%20Add%20a%20bit%20of%20water%20to%20just%20cover%20the%20bottom%20of%20your%20pot%20(I%20used%201/2%20cup).%3C/p%3E%3Cp%3EGetting%20Ready%20to%20Bake%3C/p%3E%3Cp%3ESet%20crockpot%20on%20low%20for%208-10%20hours.%20The%20more%20time%20the%20better.%20Serve%20with%20comforting%20vegetables.%3C/p%3E%3Cp%3EPerfectly%20cooked%3C/p%3E%3Cp%3ENOTE:%20The%20leftover%20chicken%20also%20doubles%20as%20some%20awesome%20chicken%20salad.%20Break%20apart%20bits%20of%20chicken%20with%20your%20fingers,%20and%20stir%20in%20some%20salt,%20pepper,%20mayo%20and%20anything%20else%20you%20have%20on%20hand.%20I%20added%20some%20celery,%20dried%20cranberries%20and%20a%20little%20curry%20powder.%3C/p%3E%3Cp%3EFixings%20for%20Chicken%20Salad%E2%80%93Chicken,%20Dried%20Cranberries,%20Celery,%20Curry%20and%20Mayo%3C/p%3E%3Cp%3ECrockpot%20Chicken%20Tikka%20Masala%20(trinemarie.com)%3C/p%3E%3Cp%3EBBQ%20Brisket%20Crockpot%20Style%20(bklynlocavore.com)%3C/p%3E%3Cp%3ECrockpot%20Chicken%20Tacos%20(gamecockgi
