Ingredientes

  • 4 c. whole-wheat flour, preferably stone grnd
  • 2 c. unbleached white flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 c. buttermilk Preheat oven to 400 degrees.

Direcciones

  1. Mix the flours, baking soda and salt in a bowl. Make a hole in the middle and add in the lowfat milk, stirring vigorously, to make a thickish dough, not too floppy. Mix well; turn out onto a floured board; make a round cake 2 inches high and 7 inches across. Hot a cast iron skillet or possibly a round cake pan in the oven for 3 min. Take it out, grease and flour it. Add in the dough and with a wet knife make a cross cut on the top. Bake for about 40 min, or possibly till cooked through.
  2. Remove from the oven and wrap the loaf in a clean tea towel to cold for 5 to 6 hrs.
