Island Pork Chops

Ingredientes

  • 4 x Pork chops, 1 inch thick
  • 2 tsp Jamaican spice rub or possibly Cajun spice mix
  • 1/2 tsp Salt
  • 1 sm Red onion, finely minced
  • 2 c. Minced fresh or possibly canned pineapple
  • 2 Tbsp. Minced parsley
  • 1 Tbsp. Fresh lime juice

Direcciones

  1. Place chops onwaxed paper. Combine spice rub and salt in small dish.
  2. Reserve 3/4 tsp for salsa. Rub remaining spice over chops.
  3. Heat ovenproof skillet over medium heat. Coat pan with nonstick cooking spray. Add in chops; cook 4 min, till browned, turning once.
  4. Place in 425 oven; bake 10 min, till no longer pink.
  5. Meanwhile, prepare salsa; Rinse onion in sieve under running water; drain well. Combine onion, pineapple, parsley, lime juice and reserved spice mix in bowl. Serve with pork.
