.%20%20I%20remember%20liking%20it%20but%20I'll%20admit%20I%20was%20quite%20frightened%20by%20the%20damp%20slabs%20of%20raw%20fish%20flesh%20my%20counterparts%20were%20devouring.%20%20As%20time%20went%20by%20I%20started%20eating%20meat%20again%20and%20really%20got%20a%20taste%20for%20sushi.%20%20I%20still%20have%20a%20problem%20with%20certain%20Japanese%20textures%20(jelly%20and%20slimy%20are%20not%20my%20friends).%20%20I%20love%20a%20good%20spicy%20tuna%20roll%20and%20as%20far%20as%20nigiri%20sushi%20goes%20I%20really%20love%20salmon,%20tuna,%20eel,%20and%20cooked%20shrimp%20(ebi).%20%20Yeah%20yeah,%20not%20too%20adventurous%20but%20for%20someone%20with%20the%20gag%20reflex%20of%20a%20newborn%20kitten%20with%20a%20two%20pound%20hairball%20and%20strep%20throat%20I%20do%20what%20I%20can.%20%20I%20love%20fish%20there%20are%20just%20certain%20textures%20I%20can't%20do.%20%20I%20wouldn't%20last%20two%20seconds%20on%20Fear%20Factor.%3C/p%3E%3Cp%3EK%20and%20I%20decided%20to%20have%20a%20little%20sushi%20party%20so%20I%20bought%20some%20beautiful%20sashimi%20grade%20tuna%20and%20salmon.%20%20We%20also%20got%20a%20few%20bottles%20of%20my%20favorite%20sparkling%20sake.%20%20Sushi%20rice%20is%20fairly%20simple.%20%20Wash%20some%20calrose/sticky%20rice%20until%20the%20water%20runs%20clear.%20%20When%20cooking%20rice%20the%20ratio%20is%201%20cup%20rice%20to%201%201/4%20cup%20of%20water.%20%20Let%20it%20sit%20in%20the%20water%20off%20the%20heat%20for%2010%20minutes.%20%20Turn%20on%20the%20rice%20cooker%20and%20let%20it%20cook%20or%20if%20you%20do%20it%20in%20a%20pot%20bring%20to%20a%20boil%20then%20turn%20it%20down%20to%20low%20heat%20and%20cook%20for%2018%20minutes.%20%20Let%20it%20sit%20for%2010%20minutes%20after%20cooking%20off%20the%20heat.%20To%20make%20it%20sushi%20rice%20cool%20the%20rice%20down%20in%20a%20sheet%20pan%20and%20gently%20stir%20in%20a%20little%20bit%20of%20rice%20wine%20vinegar,%20sugar,%20and%20salt%20(2%20cups%20rice,%201%20Tbsp%20vinegar,%201%20tsp%20sugar,%201%20tsp%20salt).%20%20The%20you%20can%20make%20rolls,%20or%20nigiri%20sushi.%20%20Buy%20some%20nori%20seaweed%20sheets,%20sesame%20seeds,%20and%20some%20wasabi.%20%20To%20start%20place%20a%20bowl%20of%20water%20next%20to%20you%20and%20dip%20your%20hands%20in%20it%20to%20keep%20the%20rice%20from%20sticking%20to%20them%20and%20everything%20else%20near%20you.%20%20On%20a%20sushi%20mat%20(order%20on%20online%20if%20you%20don't%20have%20a%20local%20Asian%20grocery)%20lay%20down%20a%20piece%20of%20toasted%20nori,%20spread%20a%20thin%20layer%20of%20rice%20to%20about%201%20inch%20from%20the%20opposite%20edge,%20lay%20a%20strip%20of%20whatever%20you%20want%20on%20the%20side%20closest%20to%20you%20(ie:%20chopped%20up%20spicy%20tuna,%20cucumber%20strips,%20hot%20dogs,%20whatever),%20and%20tightly%20roll%20up%20into%20a%20little%20cigar.%20%20Slice%20with%20a%20sharp%20knife%20and%20eat.%20%20I%20like%20dipping%20them%20in%20soy%20sauce%20and%20wasabi%20and%20if%20that%20makes%20me%20a%20dumb%20American%20who%20doesn't%20do%20the%20traditional%20way%20things%20should%20be%20done%20I%20say%20this.%20%20I'm%20not%20Japanese%20so%20shut%20up.%20%20I'm%20pretty%20sure%20the%20authenticity%20police%20aren't%20going%20to%20lock%20me%20up%20and%20throw%20away%20the%20key%20for%20this%20tragic%20%20offense.%20%20Rules%20are%20for%20fools.%20%20It's%20not%20too%20hard%20to%20do%20once%20you%20figure%20a%20few%20things%20out.%20%20Make%20sure%20you%20drink%20some%20sake%20when%20rolling%20sushi%20as%20this%20definitely%20enhances%20how%20much%20fun%20you'll%20have.%20%20Also,%20make%20sure%20you%20wash%20your%20hands%20because%20nobody%20wants%20to%20eat%20a%20dirty%20tuna%20roll.%20%20I%20know%20I%20don't.%3C/p%3E){kind=link}
