Receta It’s All in a Monday
I was really looking forward to today! I know that seems silly, most folks dread Mondays. But you see today is the first day in my week long countdown to my Bachelorette Weekend!!! Woo Hoo!! I was so excited this morning I nearly leapt out of bed!
I’m not sure about the weather where you guys are, but here in the triangle of NC, we have been blessed with some pretty dreamy summer days! When I woke up this morning I immediately strapped on my running shoes and harnessed Max up! This was my fifth day in a row running in the morning outside, and I just can’t believe how amazing it has felt! Tomorrow shouldn’t be too hot, but the rumor is that Wednesday’s going to be scorching. Until then, I’m living it up. After my run I made a banging bowl of oats!

- Peanut Butter Honey Oats
- In the mix: 1/3 cup water, 1/3 cup milk, 1/3 cup gluten free oats, 8 slices of banana, 1/2 tbsp. chia powder, topped with a handful of
Bakery on Main Extreme Fruit & Nut Granola the company sent me to try! I liked this granola way better than the berry flavor! it was crunchy, full of huge hunks of nuts, and tasted like honey nut cheerios :) Yum!
Look at that walnut!! I also drizzled on 1/2 tbsp. of fresh peanut butter.
I don’t know if it was the granola or the peanut butter, or the fact that I had just ran, but this bowl was SUPER tasty!!
After such a great breakfast, I rode my “great day” high over to work. Work was work, but it went by fast. My oats held me over until 1:30!! Once the hunger pangs started, they came fast! So I quickly took a break and enjoyed yet another delicious Udi’s sandwich!!
Even the butt of the Udi’s bread is tasty! :) I used the butt of an Udi’s white sandwich bread and the butt of an Udi’s Whole Grain sandwich bread, topped with a slice of Havarti, a juicy red tomato, and thin sliced onion. I pressed it at home and then ate it room temperature. Alongside I enjoyed
super crunchy carrot sticks! Dipped in
plain 0% fat Fage Greek yogurt spiked with Hidden Valley Ranch Seasoning.

I LOVED this lunch! It was so filling and satisfying…plus so many flavors!

Ayala’s Herbal Water in Cinnamon Orange Peel! Have you guys tried this? I’ll admit I was skeptical, but then I tasted it: WOW!! It was amazing!! I can’t wait to try other flavors. Check out these ingredients:
On their website, they list six flavors total PLUS a sparkling line too!! I hope Whole Foods carries lemon verbana geranium. That sounds interesting!!
Ok, I’m off to bake a cheesecake! We’re having a bake off in our neighborhood tomorrow and I gotta represent the gluten haters!!
