%3C/p%3E%3Cp%3ESo%20when%20a%20friend%20told%20me%20about%20these%20awesome%20muffins%20her%20kids%20made%20for%20her%20birthday%20breakfast,%20I%20was%20totally%20intrigued.%20One%20of%20my%20favorite%20flavors%20of%20cake/cupcakes%20is%20%22funfetti%22%20and%20I%20had%20never%20thought%20about%20doing%20the%20same%20thing%20with%20muffins!%20How%20genius!%20And%20what%20a%20great%20treat%20for%20a%20special%20person%20on%20their%20special%20day!%3C/p%3E%3Cp%3EBut%20here%20was%20my%20dilemma.%20The%20next%20birthday%20in%20our%20house%20isn't%20until%20July...Mr.%20E's.%20And%20while%20I%20know%20he%20would%20enjoy%20these,%20he%20isn't%20quite%20as%20infatuated%20with%20muffins%20and%20sprinkles%20as%20much%20as%20Monkey%20and%20I.%20But%20our%20birthdays%20aren't%20until%20September%20and%20next%20February.%20There%20was%20no%20way%20I%20was%20waiting%20that%20long%20to%20try%20these%20out.%20So,%20I%20told%20myself%20%22Hey,%20it's%20someone's%20birthday%20today,%20right?%22%3C/p%3E%3Cp%3EOh.%20My.%20Word.%20These%20are%20my%20new%20favorite!%20They%20are%20super%20moist,%20super%20sweet%20and%20super%20fun!%20Probably%20not%20one%20I%20would%20serve%20for%20breakfast%20before%20school%20(Don't%20need%20little%20ones%20in%20a%20sugar%20coma%20by%2010%20am)%20but%20for%20after%20school%20snack,%20dessert%20or%20fun%20weekend%20treat,%20absolutely.%20Oh,%20how%20cute%20would%20they%20be%20in%20a%20packed%20lunch%20on%20your%20kid's%20birthday??!!..I%20will%20have%20to%20remember%20that!)%3C/p%3E%3Cp%3EForget%20cupcakes,%20these%20birthday%20cake%20muffins%20are%20the%20new%20hot%20sprinkle%20destination!%3C/p%3E%3Cp%3EBirthday%20Cake%20Muffins%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400.%20Line%20a%20muffin%20tin%20with%20papers.%20In%20a%20large%20bowl%20whisk%20together%20flour,%20baking%20powder,%20salt%20and%201%20c.%20sprinkles.%20%20In%20a%20medium%20bowl%20whisk%20together%20buttermilk,%20eggs,%20oil,%20sugar%20and%20vanilla.%20Combine%20wet%20ingredients%20into%20dry.%20Mix%20just%20until%20combined.%20Spoon%20batter%20into%20muffin%20cups,%20about%203/4%20way%20full.%20Bake%20for%2015-20%20minutes%20until%20toothpick%20comes%20out%20clean.%20Cool%20on%20a%20wire%20rack.%20In%20a%20small%20bowl%20combine%20powdered%20sugar%20and%20milk%20until%20smooth.%20Drizzle%20over%20cooled%20muffins%20and%20add%20extra%20sprinkles.%20*NOTE*%20For%20the%20sprinkles%20inside%20the%20muffins,%20I%20like%20the%20%22jimmy%22%20style,%20long%20and%20thin.%20For%20the%20top,%20I%20like%20the%20little%20round%20%22nonpareils.%22%3C/p%3E){kind=link}
