.%20%20This%20Italian%20Almond%20cookie%20topped%20my%20list.%20%20Why,%20well%20because%20my%20side%20of%20the%20family%20is%20Italian%20of%20course!!%20:-).%20%20I%20was%20not%20sure%20how%20well%20this%20cookie%20would%20go%20over%20though%20and%20a%20bit%20nervous%20making%20them.%20%20I%20was%20pleased%20to%20see%20my%20son%20sneak%20one%20off%20of%20the%20tray%20I%20was%20getting%20ready%20to%20photograph%20for%20this%20post.%20%20I%20giggle%20just%20thinking%20back%20about%20it.%20%20He%20says,%20%22Mom%20these%20are%20good.%22%20%20Yay!%3C/p%3E%3Cp%3EI%20have%20heard%20folks%20put%20almond%20slivers%20in%20them,%20roll%20them%20or%20top%20them%20in%20ground%20almonds.%20%20It%20makes%20for%20a%20really%20nice%20touch.%20%20And%20then%20I%20seen%20a%20recipe%20over%20at%20GF%20Homemaker%20that%20adds%20Cherries.%20%20I%20tried%20that%20too,%20very%20good!!!%3C/p%3E%3Cp%3ECombine%20almonds%20and%20sugar%20in%20a%20food%20processor.%3C/p%3E%3Cp%3EPulse%20and%20puree%20until%20you%20achieve%20a%20fine%20powder%20(just%20before%20butter).%3C/p%3E%3Cp%3EAdd%20eggs%20to%20mixing%20bowl%20and%20beat%20until%20fluffy.%3C/p%3E%3Cp%3EAdd%20almond/sugar%20puree,%20soda,%20butter,%20salt%20and%20extracts.%20%20Mix%20until%20incorporated%3C/p%3E%3Cp%3EScoop%20dough%20out%20in%20tablespoon%20or%20cookie%20scoop%20measure%20ont%20baking%20sheet%20leaving%201%20to%201-1/2%20inches%20apart.%3C/p%3E%3Cp%3EBake%20at%20350%20degrees%20for%2015%20minutes.%3C/p%3E%3Cp%3ECookies%20will%20achieve%20a%20thin%20wafer%202%20inches%20in%20diameter%20that%20is%20surprisingly%20chewy%20yet%20crispy.%3C/p%3E%3Cp%3ELater%20on,%20I%20added%201%20cup%20of%20flour%20and%201%20teaspoon%20of%20Xanthan%20Gum%20so%20I%20could%20achieve%20a%20puffier%20cookie.%20%20Any%20old%20flour%20blend%20will%20do.%20%20It%20takes%20from%20the%20pure%20almond%20flavor%20of%20the%20original%20but%20a%20softer%20cookie%20results.%20%20Noticed%20I%20tried%20adding%20dried%20cherries%20in%20this%20softer%20cookie.%3C/p%3E){kind=link}
