Ingredientes

  • 2 tsp extra-virgin extra virgin olive oil
  • 10 ounce skinless boneless chicken breast cut in 1/2" pcs or possibly use chicken tenders
  • 5 ounce warm Italian sausage cut into 1/2" thick pcs sweet or possibly mild may be used
  • 2 Tbsp. red wine vinegar
  • 2 med green bell peppers cut into strips
  • 1 med red onion minced
  • 2 x garlic cloves chopped
  • 1/2 tsp dry basil leaves
  • 1/2 tsp dry Italian seasoning
  • 2 c. plus 1/2 c. canned crushed tomatoes
  • 1/2 c. low sodium chicken broth
  • 2 Tbsp. grated parmesan cheese
  • 2 Tbsp. rinsed liquid removed capers

Direcciones

  1. EIn a large nonstick skillet, heat oil, add in chicken. ECook over medium-high heat, stirring frequently, 6 to 8 min, till golden brown and cooked through. EWith a slotted spoon, transfer chicken to bowl, set aside.
  2. EAdd sausage to skillet, cook, stirring frequently, 8 to 10 min, till browned. EPour in vinegar, cook 1 to 2 min, till liquid evaporates. EAdd peppers, onion, garlic, basil and Italian seasoning, cook, stirring frequently, 4 to 5 min, till tender.
  3. EStir in tomatoes, broth, cheese and capers, bring to a boil. EReturn chicken to skillet, reduce heat to low. ESimmer, stirring occasionally, 5 - 10 min, till sauce thickens slightly. EServe over pasta.
