Ingredientes

  • 12 ounce Uncooked rotini pasta
  • 1 1/2 c. Mayonnaise
  • 2 Tbsp. Grated parmesan cheese
  • 1/4 c. Red wine vinegar
  • 1 tsp Italian seasoning
  • 1/2 tsp Black pepper
  • 8 x Hard-boiled Large eggs, peeled & cubed
  • 3 c. Shredded mozzarella cheese
  • 1 lrg Green or possibly red pepper, minced
  • 4 x Or possibly 5 scallions, minced
  • 2 Tbsp. Finely minced fresh parsley

Direcciones

  1. Cook the pasta according to directions. Drain and set aside in a large bowl. In a medium sized bowl, combine the mayonnaise, Parmesan, vinegar, Italian seasoning, and black pepper; stir into the pasta. Add in the remaining ingredients and mix well. Best when chilled, covered for a few hrs before serving.
  2. Note: You can even add in some minced pepperoni or possibly leftover cooked chicken or possibly turkey; go ahead and make it as healthy as you'd like.
