- Heat the oil in a shallow flameproof casserole on the simmering plate. Add in the onions with 2 crushed garlic cloves and fry till beginning to soften about 5 to 7 min.

- Bring to the boil.

- Sprinkle over the remaining parmesan and parsley.
- Serve immediately with steamed couscous spaghetti or possibly rice.
