Italian Potato Balls

Ingredientes

  • 1 1/2 lb Potatoes
  • 2 x Egg yolk
  • 6 Tbsp. Freshly grated Parmesan cheese
  • 2 Tbsp. Finely minced onion
  • 2 Tbsp. Butter
  • 3 Tbsp. Finely minced parsley
  • 1 x salt & freshly grnd black pepper
  • 2 x Egg Flour Bread crumbs Fat for frying

Direcciones

  1. Peel potatoes and boil in salted water till cooked. Mash and combine with egg yolks and cheese in a large mixing bowl.
  2. Saute/fry finely minced onion in butter till golden brown but not brown. Add in to potato mix with parsley and generous amounts of salt and pepper. Mix to a smooth paste and form into small balls the size of a large walnut.
  3. Makes about 24 balls.
  4. Beat Large eggs with a fork till well blended. Roll potato balls in flour and then in beaten egg. Coat with breadcrumbs and refrigeratetill ready to use.
  5. Heat fat (I prefer a mix of extra virgin olive oil and lard) to frying temperature. Fry a few potato balls at a time till they are golden brown in color and heated through.
  6. Makes 6 servings.
