%20--%20there%20was%20always%20a%20multi-layered%20Italian%20rum%20cake.%20As%20a%20kid,%20it%20didn't%20appeal%20to%20me,%20but%20as%20an%20adult,%20I%20think%20it's%20got%20to%20be%20one%20of%20my%20favorite%20desserts.%20All%20the%20essential%20ingredients%20are%20there%20--%20a%20tender%20cake%20to%20bite%20into,%20chocolate%20and%20vanilla%20pastry%20cream,%20sweet%20ricotta%20with%20chocolate%20bits,%20whipped%20cream.%20All%20that%20and%20booze%20too.%20If%20you're%20over%20the%20legal%20drinking%20age,%20what's%20not%20to%20love?%20Oh%20sure,%20you%20can%20make%20it%20without%20the%20alcohol%20for%20the%20younger%20set,%20but%20it%20won't%20be%20the%20same%20without%20the%20rum%20(not%20to%20mention%20the%20Sambuca%20that%20I%20add%20too.)%20Have%20it%20your%20way,%20but%20do%20try%20it.%20It's%20easier%20than%20you%20think.%3C/p%3E%3Cp%3EYou%20start%20out%20with%20a%20basic%20sponge%20cake.%20I%20made%20mine%20in%20a%20springform%20pan%20and%20sliced%20it%20in%20half.%20Insert%20some%20toothpicks%20all%20around,%20then%20cut%20with%20a%20serrated%20knife,%20using%20the%20toothpicks%20as%20a%20guide.%3C/p%3E%3Cp%3EOnce%20you've%20cut%20it%20in%20half,%20cut%20it%20in%20half%20again%20so%20that%20you%20have%20four%20layers.%3C/p%3E%3Cp%3EIn%20between%20one%20of%20the%20layers,%20smear%20some%20of%20the%20chocolate%20pastry%20cream.%20Whoops,%20before%20you%20do%20that,%20sprinkle%20a%20good%20amount%20of%20rum%20over%20the%20bare%20cake.%3C/p%3E%3Cp%3EOn%20the%20next%20layer,%20drizzle%20more%20rum%20(or%20Sambuca%20as%20I%20did),%20then%20smear%20on%20the%20vanilla%20pastry%20cream.%3C/p%3E%3Cp%3EThe%20final%20layer%20also%20gets%20doused%20with%20rum%20(don't%20be%20stingy),%20then%20topped%20with%20a%20layer%20of%20ricotta%20that's%20been%20mixed%20with%20sugar%20and%20chocolate%20bits.%20%20A%20special%20shout-out%20to%20Anna,%20owner%20of%20D'Angelo%20Italian%20Market%20in%20Princeton.%20She%20knew%20I%20was%20making%20this%20cake%20and%20came%20down%20from%20Brooklyn%20with%20a%20fresh%20batch%20of%20ricotta%20just%20for%20me.%20If%20you%20live%20anywhere%20near%20Princeton,%20check%20out%20the%20store.%20It's%20a%20great%20place%20to%20grab%20a%20bite%20to%20eat%20in%20the%20center%20of%20town,%20and%20you'll%20find%20lots%20of%20hard-to-find%20Italian%20groceries%20and%20specialty%20products,%20including%20a%20panettone%20with%20amarena%20cherries%20that%20I%20can't%20wait%20to%20try.%3C/p%3E%3Cp%3EHere's%20how%20it%20looks%20when%20the%20layers%20are%20in%20place%20with%20the%20filling.%20Now%20how%20to%20frost%20this?%3C/p%3E%3Cp%3EEasy.%20Just%20whip%20up%20some%20cream%20and%20spread%20it%20along%20the%20sides%20and%20top.%20Add%20some%20toasted%20almonds%20or%20walnuts%20to%20the%20side%20of%20the%20cake.%20Use%20a%20piping%20bag%20to%20make%20some%20decorations%20if%20you%20want.%20You%20can%20probably%20guess%20this%20cake%20was%20for%20my%20friend%20Pietro,%20who%20celebrated%20a%20birthday%20recently.%3C/p%3E%3Cp%3EWith%20the%20holidays%20approaching,%20this%20cake%20would%20be%20a%20perfect%20special%20dessert.%20You%20can%20even%20bake%20the%20cake%20ahead%20of%20time%20and%20store%20it%20in%20the%20freezer,%20wrapped%20in%20foil,%20until%20you're%20ready%20for%20the%20fillings.%20But%20don't%20count%20on%20putting%20any%20leftovers%20in%20the%20freezer%20once%20it's%20assembled.%20I%20guarantee%20there%20won't%20be%20any.%3C/p%3E%3Cp%3EItalian%20Rum%20Cake%3C/p%3E%3Cp%3EPlace%20the%20sugar,%20egg%20yolks%20and%20flour%20in%20a%20pan%20and%20stir%20with%20a%20wooden%20spoon%20until%20the%20mixture%20is%20smooth%20and%20light%20yellow%20and%20all%20the%20sugar%20is%20dissolved.%20Heat%20the%20milk%20in%20another%20saucepan%20until%20it%20is%20scalding%20hot.%20Slowly%20pour%20the%20hot%20milk%20over%20the%20eggs,%20stirring%20constantly%20over%20heat.%20Keep%20stirring%20and%20cook%20until%20the%20mixture%20becomes%20really%20thick.%20Take%20half%20of%20the%20cream%20and%20put%20it%20into%20another%20pan%20and%20put%20the%20chocolate%20into%20this%20half.%20Mix%20until%20it's%20incorporated.%20With%20the%20pastry%20cream%20in%20the%20first%20pan,%20remove%20from%20the%20heat%20and%20add%20the%20vanilla.%20Put%20a%20piece%20of%20plastic%20wrap%20on%20the%20surface%20of%20both%20the%20vanilla%20and%20the%20chocolate%20pastry%20cream%20to%20prevent%20a%20skin%20from%20forming.%3C/p%3E%3Cp%3EIf%20I'm%20feeling%20particularly%20indulgent,%20I'll%20whip%20up%20some%20cream%20and%20fold%20that%20into%20the%20pastry%20cream.%20For%20the%20cake%20in%20the%20photo,%20I%20didn't%20do%20it%20this%20time%20(but%20I%20wish%20I%20had).%3C/p%3E%3Cp%3EDon't%20tell%20anybody,%20but%20I%20have%20also%20been%20known%20to%20use%20a%20boxed%20pudding%20mix%20and%20add%20whipped%20cream%20to%20that.%3C/p%3E%3Cp%3ERicotta%20filling%3C/p%3E%3Cp%3E2%20cups%20fresh%20ricotta%20(try%20to%20find%20this%20at%20an%20Italian%20specialty%20store,%20but%20in%20a%20pinch%20use%20the%20commercial%20stuff%20you%20find%20at%20the%20supermarket.%3C/p%3E%3Cp%3E1/2%20cup%20confectioner's%20sugar%3C/p%3E%3Cp%3E2%20ounces%20semi-sweet%20chocolate%20cut%20in%20small%20bits%3C/p%3E%3Cp%3EDrain%20the%20ricotta%20overnight.%20I%20do%20this%20by%20lining%20a%20colander%20with%20a%20large%20coffee%20filter.%20You%20can%20use%20cheesecloth,%20or%20even%20paper%20towels.%20I%20dump%20the%20ricotta%20into%20the%20coffee%20filter,%20cover%20it%20with%20a%20plate%20large%20enough%20to%20cover,%20but%20small%20enough%20so%20I%20can%20press%20down%20on%20the%20ricotta.%20Then%20put%20a%20heavy%20can%20on%20top%20of%20the%20plate.%20Put%20the%20whole%20thing%20in%20the%20refrigerator%20overnight,%20placing%20a%20bowl%20under%20the%20colander%20to%20catch%20the%20liquid.%3C/p%3E%3Cp%3EThe%20next%20day,%20with%20a%20wooden%20spoon,%20mix%20the%20ricotta%20with%20the%20sugar%20and%20the%20chocolate%20bits.%3C/p%3E%3Cp%3Eother%20ingredients%20needed:%3C/p%3E%3Cp%3Ea%20couple%20of%20tablespoons%20for%20each%20layer:%3C/p%3E%3Cp%3Erum%20(I%20use%20the%20darker,%20golden%20rum)%3C/p%3E%3Cp%3ESambuca%20(or%20other%20liqueur%20you%20might%20prefer)%3C/p%3E%3Cp%3EFrosting%3C/p%3E%3Cp%3E2%20cups%20whipping%20cream%3C/p%3E%3Cp%3E1/4%20cup%20confectioner's%20sugar%3C/p%3E%3Cp%3EWhip%20the%20cream%20with%20the%20sugar%20until%20firm,%20but%20don't%20over%20beat%20or%20you'll%20end%20up%20with%20butter.%3C/p%3E%3Cp%3E1/2%20cup%20toasted%20sliced%20almonds%3C/p%3E%3Cp%3EAssembly:%3C/p%3E%3Cp%3EYou%20can%20place%20the%20fillings%20in%20any%20order%20you%20like%20-%20chocolate%20on%20top,%20bottom%20or%20middle,%20ricotta%20on%20top%20or%20whatever%20moves%20you.%3C/p%3E%3Cp%3EPlace%20one%20layer%20of%20cake%20on%20a%20cake%20stand.%20Sprinkle%20with%20a%20couple%20of%20tablespoons%20of%20rum%20(or%20more).%20Spread%20the%20ricotta%20cream%20over%20the%20cake.%20Place%20another%20layer%20of%20cake%20over%20the%20ricotta,%20douse%20with%20Sambuca%20or%20rum%20or%20any%20other%20liqueur%20you%20prefer.%20Spread%20with%20the%20vanilla%20pastry%20cream.%20Place%20the%20third%20layer%20of%20cake%20over%20the%20vanilla%20pastry%20cream%20and%20sprinkle%20with%20more%20rum%20or%20other%20liqueur.%20Spread%20the%20chocolate%20pastry%20cream%20over%20that.%3C/p%3E%3Cp%3ECover%20with%20the%20final%20layer%20of%20cake%20and%20spread%20the%20whipped%20cream%20over%20the%20top%20and%20sides.%3C/p%3E%3Cp%3EUsing%20your%20fingers,%20press%20the%20almonds%20into%20the%20side.%20If%20desired,%20pipe%20some%20whipped%20cream%20rosettes%20over%20the%20top.%3C/p%3E){kind=link}
