Jalapeno Black Eyed Peas

Ingredientes

  • 9 slc Bacon, cut into 1/2 inch
  • 1 sm Onion, minced
  • 40 ml Garlic, chopped
  • 4 c. Water
  • 2 lb Fresh black-eyed peas (about 6 c.), shelled
  • 1 sm Jalapeno pepper, minced
  • 1/2 tsp Black pepper
  • 1 c. Ham, cooked, chopped
  • 1/4 c. Green onions, minced

Direcciones

  1. Cook bacon in a Dutch oven till crips; remove bacon with a slotted spoon, reserving 2 Tbsp. drippings in Dutch oven. Drain bacon and set aside.
  2. Saute/fry' onion and garlic in reserved drippings till tender. Add in water, peas, jalapeno and pepper. Bring to a boil. Cover, reduce heat, and simmer 1 hour. Add in bacon, ham and green onions, and cook an additional 15 min.
  3. Yield: 6 to 8 servings.
