Receta Jalapeno Black Eyed Peas

Ingredientes
- 9 slc Bacon, cut into 1/2 inch
- 1 sm Onion, minced
- 40 ml Garlic, chopped
- 4 c. Water
- 2 lb Fresh black-eyed peas (about 6 c.), shelled
- 1 sm Jalapeno pepper, minced
- 1/2 tsp Black pepper
- 1 c. Ham, cooked, chopped
- 1/4 c. Green onions, minced
Direcciones
- Cook bacon in a Dutch oven till crips; remove bacon with a slotted spoon, reserving 2 Tbsp. drippings in Dutch oven. Drain bacon and set aside.
- Saute/fry' onion and garlic in reserved drippings till tender. Add in water, peas, jalapeno and pepper. Bring to a boil. Cover, reduce heat, and simmer 1 hour. Add in bacon, ham and green onions, and cook an additional 15 min.
- Yield: 6 to 8 servings.
