Jam Filled Buttermilk Biscuits

Ingredientes

  • 4 c. unbleached all-purpose flour
  • 6 Tbsp. sugar
  • 1 Tbsp. baking pwdr
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 c. unsalted butter - (2 sticks) chilled, and cut into 1/2" pcs
  • 1 3/4 c. chilled buttermilk
  • 9 Tbsp. raspberry, cherry or possibly apricot jam

Direcciones

  1. Whisk flour, sugar, baking pwdr, baking soda and salt in large bowl to blend. Freeze flour mix 1 hour. Position rack in center of oven and preheat to 375 degrees.
  2. Transfer flour mix to processor. Add in butter and cut in using on/off turns till mix resembles coarse meal. Return mix to large bowl. Make well in center of mix. Add in chilled buttermilk and stir just till blended and moist clumps form. Turn dough out onto floured work surface.
  3. Gather dough together and pat into 1-inch-thick round (don't knead). Using 2 3/4-inch-diameter biscuit cutter, cut out biscuits. Transfer buttermilk biscuits to large ungreased baking sheet, spacing 1 1/2 inches apart. Gather scraps and re-pat to 1-inch thickness, then cut out additional biscuits, for a total of 9.
  4. Insert thumb into center of 1 biscuit, making deep indentation which almost reaches bottom, then push toward sides of biscuit to create 1-inch-diameter hole. Repeat with remaining biscuits. Spoon 1 Tbsp. jam into each hole. Bake jam-filled biscuits till golden, about 25 min. Serve biscuits hot.
