Ingredientes

  • 4 c. chicken broth
  • 4 lrg carrots, scrubbed and cut into 1/2 inch slices
  • 1 sm onion, minced
  • 2 tsp grated fresh ginger
  • 1 x clove garlic, chopped
  • 2 Tbsp. peanut butter
  • 1 tsp Worcestershire sauce
  • 1 tsp curry pwdr, optional
  • 1/4 tsp nutmeg Dash of Tabasco Salt and pepper to taste Diced red-skinned apples for garnish

Direcciones

  1. Place broth, carrots, onion, ginger, garlic, peanut butter, Worcestershire sauce and curry pwdr in a large saucepan. Bring to boil. Lower heat. Cover and simmer about 20 min, or possibly till carrots are very tender. Cold slightly.
  2. Blend in batches in blender or possibly food processor till very smooth. Add in nutmeg, Tabasco, salt and pepper. Garnish with diced apple.
