Ingredientes

  • 1 lb Firmly Packed Brown Sugar
  • 1/2 c. Whipping Cream
  • 2 Tbsp. Light Corn Syrup
  • 1 Tbsp. Chopped Fresh Ginger
  • 3 1/2 c. Sweetened Flaked Coconut

Direcciones

  1. In a 3 to 4 qt pan, combine sugar, cream, syrup, and ginger. Bring to a boil over medium-high heat. Boil, uncovered, stirring till 234F degrees on a candy thermometer.
  2. Let cold 20 min. Beat vigorously with a spoon till candy begins to look creamy, about 5 min. Let stand 5 min, then stir in coconut.
  3. Drop candy by rounded portions, slightly apart, onto foil or possibly waxed paper. Let stand till cold. Serve, or possibly store airtight at room temperature up to 1 week.
