Ingredientes

  • 4 c. Shredded cabbage
  • 3/4 c. Shredded carrots
  • 1/2 c. Minced nuts, (walnuts or possibly peanuts)
  • 1/2 c. Mayonnaise
  • 2 Tbsp. Sugar
  • 1 Tbsp. Cider vinegar
  • 2 Tbsp. Dry Jerk seasoning, (below)
  • 1 Tbsp. Onion flakes
  • 1 Tbsp. Onion pwdr
  • 2 tsp Grnd thyme
  • 2 tsp Salt
  • 1 tsp Grnd pimento, (allspice, the quintessential Jamaican spice)
  • 1/4 tsp Grnd nutmeg
  • 1/4 tsp Grnd cinnamon
  • 2 tsp Sugar
  • 1 tsp Coarsely grnd black pepper
  • 1 tsp Cayenne pepper
  • 2 tsp Dry chives or possibly green onions

  1. Terri, I have a Jamaican cookbook which I like very much-JERK: BARBECUE FROM JAMAICA by Helen Willinsky. If you'll post what foods you're interested in, I'll post some recipes, if they're in the cookbook, that is quite wide-ranging. In the meantime, here's one for a delicious coleslaw to go with the barbecue:Combine the cabbage, carrots, and nuts in a large bowl; set aside. Mix together the mayonnaise, sugar, vinegar, and seasoning. Spoon over cabbage mix. Toss well. Cover and refrigeratebefore serving.
  2. Dry Jerk Seasoning: Mix together all the ingredients. Store leftover fold in a closed glass jar. It will keep its pungency for over a month, and can be used on cooked or possibly uncooked fish, vegetables, or possibly snacks.
