%20about%20the%20history%20of%20jambalaya%20and%20its%20different%20styles:%20the%20brown%20Cajun%20jambalaya%20and%20the%20red%20Creole%20version.%20%20I%20grew%20up%20with%20red%20jambalaya%20and%20was%20perfectly%20satisfied%20living%20that%20way.%20%20Until%20I%20moved%20to%20Cajun%20country%20and%20discovered%20brown%20jambalaya.%20%20Suddenly%20I%20was%20hurtin'%20myself%20on%20that,%20shunning%20the%20Creole%20style%20like%20a%20restaurant%20table%20by%20the%20bathrooms.%3C/p%3E%3Cp%3EBut%20ya%20know,%20sometimes%20that%20table%20ain't%20so%20bad.%20%20Sure%20it's%20a%20busy%20spot.%20%20Sure%20it%20might%20shake%20you%20up...make%20you%20a%20little%20uneasy.%20%20But%20it's%20rarely%20dull.%20%20There's%20a%20lively%20constant%20flow%20of%20faces--some%20familiar%20ones%20who%20stop%20and%20chat%20and%20some%20unfamiliar%20ones%20who%20may%20surprise%20you%20and%20stop%20to%20chat%20too.%3C/p%3E%3Cp%3ESo,%20I'm%20back%20on%20Creole%20red%20jambalaya.%20%20Lately%20brown%20jambalaya%20seems%20like%20the%20booth%20in%20the%20corner...safe,%20quiet,%20comfortable,%20but%20kinda%20boring.%20%20The%20table%20by%20the%20restrooms%20is%20definitely%20a%20more%20interesting%20place%20to%20be.%3C/p%3E%3Cp%3ERead%20more%20about%20the%20differences%20between%20Creole%20&%20Cajun%20people%20and%20their%20food.%3C/p%3E%3Cp%3EMise%20en%20place%20for%20jambalaya:%20oil,%20smoked%20sausage%20or%20ham,%20onion,%20bell%20pepper,%20celery,%20garlic,%20green%20onion,%20white%20rice,%20dried%20thyme,%20salt,%20pepper,%20Tony's,%20beef%20broth,%20canned%20tomatoes,%20hot%20sauce,%20shrimp%3C/p%3E%3Cp%3EI'm%20not%20going%20to%20lie%20to%20ya.%20%20This%20is%20a%20lot%20of%20chopping.%3C/p%3E%3Cp%3ETo%20keep%20the%20weeknight%20crazies%20to%20a%20minimum,%20I%20like%20to%20chop%20what%20I%20need%20ahead%20of%20time.%3C/p%3E%3Cp%3EEverything%20goes%20in%20plastic%20containers%20in%20the%20fridge.%3C/p%3E%3Cp%3ESometimes%20I%20prep%20more%20than%20one%20meal%20at%20a%20time.%3C/p%3E%3Cp%3EIf%20an%20ingredient,%20like%20green%20onions%20or%20parsley,%20doesn't%20go%20into%20the%20dish%20until%20the%20end,%20I%20wrap%20them%20separately.%3C/p%3E%3Cp%3EThe%20first%20step%20is%20to%20heat%20oil%20in%20a%20pot%20and%20brown%20the%20sausage.%20%20While%20many%20Creole%20jambalayas%20are%20made%20with%20ham,%20I'm%20just%20not%20that%20big%20on%20it.%20%20I%20use%20smoked%20sausage.%20%20Or,%20use%20both.%20%20I%20won't%20judge.%3C/p%3E%3Cp%3EThis%20is%20how%20Cajun%20jambalaya%20gets%20its%20brown%20color...by%20browning%20the%20meat.%3C/p%3E%3Cp%3EWhen%20the%20sausage%20is%20browned,%20remove%20from%20the%20pot.%3C/p%3E%3Cp%3EUse%20the%20drippings%20to%20saute%20the%20onions,%20bell%20pepper,%20and%20celery.%3C/p%3E%3Cp%3ENext%20add%20the%20garlic%20and%20green%20onions%20and%20saute%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3EHere's%20a%20trick.%20%20A%20lot%20of%20recipes%20want%20you%20to%20dump%20the%20rice%20in%20when%20you%20add%20the%20liquid.%20%20I%20like%20to%20add%20the%20rice%20now,%20stir%20to%20coat%20with%20oil,%20and%20saute%20for%20a%20couple%20of%20minutes.%20%20I%20think%20this%20helps%20the%20individual%20grains%20stay%20individuals%20instead%20of%20a%20mushy%20clump.%3C/p%3E%3Cp%3EAdd%20the%20sausage%20back%20to%20the%20pot,%20along%20with%20any%20juices.%3C/p%3E%3Cp%3EAdd%20the%20dry%20seasonings%20and%20hot%20sauce.%3C/p%3E%3Cp%3EAdd%20the%20broth%20and%20tomatoes,%20which%20is%20why%20Creole%20jambalaya%20is%20red.%3C/p%3E%3Cp%3EBring%20to%20a%20boil,%20lower%20to%20a%20simmer,%20cover%20and%20cook%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EDon't%20stir%20and%20don't%20lift%20the%20lid%20to%20peek.%3C/p%3E%3Cp%3EThe%20shrimp%20go%20in%20last,%20after%20the%20rice%20is%20all%20but%20done,%20so%20they%20don't%20overcook%20and%20get%20tough.%3C/p%3E%3Cp%3EAdd%20the%20shrimp%20and%20gently%20fold%20in.%20%20If%20you%20stir,%20you'll%20mush%20up%20the%20rice.%20%20If%20there's%20a%20lot%20of%20liquid%20left%20leave%20the%20lid%20off%20while%20the%20shrimp%20cook.%3C/p%3E%3Cp%3EAfter%20about%2010%20minutes,%20the%20shrimp%20will%20be%20done.%3C/p%3E%3Cp%3EServe%20it%20up%20with%20more%20hot%20sauce%20and%20a%20beer%20and%20enjoy!%3C/p%3E%3Cp%3EThis%20is%20linked%20to:%3C/p%3E%3Cp%3ECreole%20Style%20Shrimp%20Jambalaya%3C/p%3E%3Cp%3Efrom%20Ms.%20enPlace%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20dutch%20oven.%20Add%20sausage,%20brown,%20and%20remove.%20Saute%20onion,%20bell%20pepper,%20and%20celery%20in%20sausage%20drippings%20until%20tender.%20Add%20garlic%20and%20green%20onion%20or%20parsley%20and%20saute%20until%20garlic%20is%20fragrant%20(a%20couple%20of%20minutes).%3C/p%3E%3Cp%3EAdd%20rice%20and%20saute%20a%20few%20minutes.%20Add%20sausage%20back%20to%20the%20pot%20along%20with%20the%20seasonings,%20tomatoes,%20and%20broth.%20Bring%20to%20a%20boil.%20Cover%20and%20lower%20to%20a%20simmer.%20Cook%20for%2020%20minutes%20(do%20not%20stir%20or%20peek).%20Add%20shrimp%20to%20pot%20and%20fold%20in.%20Cook%2010%20minutes%20m
