Ingredientes

  • 6 lrg uncooked shrimp peeled, deveined
  • 3 Tbsp. extra virgin olive oil
  • 4 tsp fresh lime juice
  • 2 tsp jerk seasoning (or possibly Caribbean-style seasoning blend)
  • 3/4 c. diced cantaloupe
  • 3/4 c. diced honeydew melon
  • 1/4 c. minced fresh cilantro
  • 1/4 c. diced red onion
  • 4 x lime wedges

Direcciones

  1. Prepare barbecue (medium heat). Toss shrimp, oil, 2 tsp. lime juice, and jerk seasoning blend in medium bowl. Let marinate 10 min.
  2. Meanwhile, toss cantaloupe, honeydew, cilantro, red onion, and remaining 2 tsp. lime juice in medium bowl. Season salsa to taste with salt and pepper.
  3. Thread shrimp onto metal skewers. Grill till opaque in center, occasionally brushing with marinade, about 5 min. Serve with salsa and lime wedges.
  4. This recipe yields 2 servings;
  5. can be doubled.
  6. Comments: A lightly dressed salad of baby greens would complement this entree nicely; serve rum-drizzled grilled lb. cake slices afterward.
