Ingredientes

  • 1/2 lb Jerusalem artichokes scrubbed, dry
  • 1 x green onion trimmed, minced
  • 1/3 c. chopped red pepper
  • 2 Tbsp. flour
  • 1/2 tsp sea salt
  • 1/2 tsp herbes de Provence
  • 1/8 tsp cayenne - (to 1/4)
  • 2 x Large eggs lightly beaten
  • 5 Tbsp. peanut oil

Direcciones

  1. Grate the artichokes into a mixing bowl. Add in green onion, red pepper, flour, salt and spices and toss to mix. Stir in Large eggs and mix well.
  2. Heat the oil till the surface ripples in a large skillet over medium-high heat. Scoop the batter by Tbsp. into the skillet and flatten with a spatula. Fry till the batter is crisp and brown, about 2 min on each side. Drain on paper towels while repeating with the remaining batter. Serve warm.
  3. This recipe yields 4 servings.
