Receta Jicama-Carrot Slaw...
by Nan Slaughter

When the mister proposed to me, he said, "I promise you'll have everything you need, not everything you want, but everything you need." In my very young mind, I thought that sounded perfect. Because, as we all know, a girl has needs! I needs shoes and purses and shoes and lipstick and shoes and dresses and shoes and the list goes on and on! Now the mister, he doesn't seem to think that my needs are truly needs...he actually believes that some of my needs are disguised as wants! And that is the underlying cause to every argument we have ever had...needs versus wants. He promised me I could have everything I need...and a promise is a promise! Just because HE has a problem differentiating between needs and wants, doesn't mean I don't need what I want! So I'm very careful to always say I need this or I need that...I never say I want something, that would just be rude...and would not fall under the "promise" he made! There's a lesson here: Men: Watch what you say, as you will have to eat your words or pay for them...Women: Just listen...it will eventually pay off!

We've been in a salad rut lately...Iceberg lettuce, cucumber, tomato...all cut into tiny little pieces...because that's - yawn - what the - yawn - mister likes...he's going to love being in a nursing home! It was time for a salad intervention! Jicama-Carrot Slaw is just the ticket for curing a salad rut! Crunchy jicama and carrots tossed with sweet dates and currants...par-tay in the mouth! This is a great summer salad, and it would also make a great topping for grilled chicken!

In a salad bowl combine vegetable oil, lime juice, currants and dates; let stand for 10 minutes. Add the carrots and jicama to the date mixture, season with salt and pepper and toss to coat. Garnish with pieces of torn mint. Serves 4.
