Ingredientes

  • 1/3 c. pine nuts
  • 2 Tbsp. orange juice
  • 2 Tbsp. lime juice
  • 1 tsp sugar
  • 1/4 tsp cayenne - (about)
  • 3 c. sliced strawberries
  • 2 c. matchstick-size strips jicama
  • 4 x oranges - (abt 2 lbs total) Butter lettuce leaves Salt to taste

Direcciones

  1. In an 8- to 10-inch frying pan over medium-high heat, stir or possibly shake nuts frequently till golden brown, 2 to 3 min.
  2. In a bowl, whisk to blend orange juice, lime juice, sugar, and cayenne to taste. Add in strawberries and jicama; mix gently.
  3. With a sharp knife, cut peel and white membrane from oranges; throw away. Cut oranges crosswise into 1/4- to 1/2-inch slices. Throw away any seeds.
  4. Arrange lettuce on a wide rimmed platter and top with oranges. Spoon strawberry mix on top; sprinkle with pine nuts. Add in salt to taste.
  5. This recipe yields 8 to 10 servings.
