,%20is%20here.%20Back%20home,%20these%20days%20would%20be%20filled%20with%20light%20and%20the%20sounds%20of%20crackers%20and%20fireworks.%20I%20am%20missing%20all%20that,%20being%20in%20this%20part%20of%20the%20world.%20Another%20main%20attraction%20of%20Diwali%20is%20all%20the%20different%20varieties%20of%20sweets%20that%20are%20made%20at%20home%20or%20become%20available%20in%20stores%20during%20that%20time.%20So%20this%20year%20I%20wanted%20to%20make%20something%20too,%20which%20is%20when%20I%20landed%20upon%20this%20simple%20recipe%20of%20Jalebi/Jilebi%20in%20Vanitha%20magazine.%20It%20was%20a%20super%20simple%20recipe%20that%20I%20could%20not%20help%20trying%20and%20Jalebis%20have%20always%20been%20(and%20still%20is)%20a%20weakness%20of%20mine!%3C/p%3E%3Cp%3EMakes%20around%2040%20Jilebis%20(Depending%20on%20the%20size)%3C/p%3E%3Cp%3EFor%20the%20dough%3C/p%3E%3Cp%3EYellow%20food%20color%3C/p%3E%3Cp%3E-%202%20drops%20(Optional)%3C/p%3E%3Cp%3ESalt%3C/p%3E%3Cp%3E-%20less%20than%20a%20pinch%3C/p%3E%3Cp%3ESoak%20the%20Urad%20dal%20for%20at%20least%201%20hour.%3C/p%3E%3Cp%3EGrind%20the%20soaked%20dal%20into%20a%20smooth%20paste%20adding%20half%20a%20cup%20of%20water.%3C/p%3E%3Cp%3EAdd%203-4%20drops%20of%20food%20color%20to%20this%20dough%20and%20mix%20well.%3C/p%3E%3Cp%3EIn%20a%20pan%20start%20boiling%20the%20water%20and%20sugar%20together%20for%20making%20the%20syrup.%3C/p%3E%3Cp%3EWhen%20the%20syrup%20starts%20to%20thicken,%20add%20the%20rosewater,%20salt%20and%202%20drops%20of%20food%20color.%3C/p%3E%3Cp%3EWhen%20the%20syrup%20reaches%20a%20thick%20consistency,%20turn%20the%20stove%20to%20low.%20The%20syrup%20should%20be%20on%20the%20stove%20on%20low%20flame%20through%20out%20the%20whole%20cooking%20process.%20Syrup%20should%20not%20be%20of%20a%20thread%20consistency,%20but%20rather%20that%20of%20a%20simple%20syrup%20or%20syrup%20of%20Gulab%20Jamun.%20If%20the%20water%20starts%20to%20become%20of%20thread%20consistency%20during%20the%20cooking%20process,%20add%20more%20water%20and%20adjust.%3C/p%3E%3Cp%3EIn%20a%20shallow%20frying%20pan,%20add%20oil%20and%20heat.%20When%20the%20oil%20is%20hot,%20reduce%20the%20heat%20to%20medium%20which%20is%20the%20temperature%20to%20be%20maintained%20through%20out%20the%20frying%20process.%3C/p%3E%3Cp%3EFill%20the%20dough%20into%20a%20Ziploc%20bag%20and%20make%20a%20small%20cut%20at%20one%20of%20the%20corners%20to%20squeeze%20the%20dough%20into%20the%20oil%20to%20make%20jalebis.%20Make%20sure%20that%20the%20hole%20you%20make%20is%20really%20small.%20You%20could%20adjust%20the%20size%20of%20the%20hole%20after%20trying%20to%20squeeze%20out%20a%20little%20bit%20of%20batter%20to%20the%20oil.%3C/p%3E%3Cp%3EStart%20squeezing%20out%20the%20dough%20into%20the%20oil%20in%20any%20pattern%20you%20want.%3C/p%3E%3Cp%3EFry%20the%20jalebis%20crisp%20and%20transfer%20immediately%20to%20the%20sugar%20syrup.%3C/p%3E%3Cp%3ELet%20the%20jalebi%20soak%20in%20the%20syrup%20for%205-8%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20the%20syrup%20and%20place%20it%20on%20the%20serving%20plate.%3C/p%3E%3Cp%3ENote:%20Start%20making%20the%20jalebi%20as%20soon%20as%20the%20dough%20is%20made;%20do%20not%20let%20it%20sit%20too%20long.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20it%20is%20a%20super%20simple%20recipe%20with%20very%20little%20ingredients.%20Be%20sure%20to%20try%20it%20and%20I%20am%20sure%20you%20will%20like%20it.%20A%20Happy%20Diwali%20to%20all%20my%20friends!%3C/p%3E){kind=link}
