%20up%20to%20San%20Francisco%20to%20visit%20some%20friends.%20What%20better%20excuse%20that%20to%20share%20some%20tried%20and%20true%20San%20Francisco%20favorites.%3C/p%3E%3Cp%3EThis%20dish%20is%20a%20San%20Francisco%20classic.%20It%20originated%20in%20the%201930%E2%80%B2s%20at%20Original%20Joe%E2%80%99s.%20Even%20though%20the%20dish%20is%20a%20classic,%20I%20had%20to%20put%20my%20own%20spin%20on%20things.%20I%20substituted%20extra-lean%20ground%20turkey%20for%20the%20ground%20beef.%20I%20used%20a%20ton%20of%20garlic%20(10%20cloves,%20but%20they%20were%20all%20pretty%20small)%20and%20fresh%20basil%20and%20oregano%20from%20my%20garden.%20I%20have%20to%20admit%20that%20I%20like%20the%20fact%20that%20the%20eggs%20are%20not%20the%20main%20focus%20of%20this%20egg%20dish.%20I%20feel%20like%20the%20egg%20is%20just%20there%20as%20a%20loose%20binder%20rather%20than%20the%20main%20feature.%20It%20makes%20for%20a%20nice%20change%20from%20a%20traditional%20Quiche%20or%20frittata.%20It%20also%20makes%20the%20dish%20much%20more%20adaptable%20to%20meals%20outside%20the%20morning%20hours.%20In%20true%20San%20Francisco%20style,%20Joe%E2%80%99s%20Special%20is%20traditionally%20served%20with%20sourdough.%20I%20have%20yet%20to%20discover%20gluten-free%20sourdough,%20so%20I%20served%20my%20scramble%20with%20a%20couple%20slices%20of%20gluten-free%20toast%20(Canyon%20Bakehouse%20is%20my%20favorite%20at%20the%20moment).%20Not%20quite%20the%20same%20as%20sourdough,%20but%20it%20did%20the%20job.%3C/p%3E%3Cp%3EI%20made%20Joe%E2%80%99s%20Special%20for%20Sunday%20Brunch%20over%20the%20weekend%20and%20this%20morning%20I%20heated%20up%20the%20leftovers%20for%20breakfast.%20It%20was%20even%20better!%20This%20would%20be%20a%20great%20made-ahead%20meal%20for%20brunch%20or%20for%20anytime%20you%20want%20to%20have%20a%20meal%20that%20you%20can%20reheat%20in%20a%20hurry.%3C/p%3E%3Cp%3EJoe%E2%80%99s%20Special%3C/p%3E%3Cp%3ECrack%20the%20eggs%20into%20a%20small%20bowl%20and%20add%20the%20Tabasco,%20salt%20and%20pepper.%20Whisk%20to%20combine.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet%20heat%20the%20oil%20over%20medium%20heat.%20Add%20onion%20and%20cook%20until%20beginning%20to%20brown.%20Add%20in%20garlic%20and%20cook%20until%20fragrant,%20about%202%20minutes.%20Add%20in%20ground%20turkey;%20cook,%20stirring,%20until%20browned%20and%20all%20moisture%20evaporates,%20about%2010%20minutes.%20Add%20mushrooms;%20cook,%20stirring,%20until%20beginning%20to%20soften.%20Add%20spinach;%20cook,%20stirring,%20until%20wilted.%20Add%20eggs;%20cook%20until%20eggs%20are%20cooked%20and%20mixture%20is%20slightly%20dry,%20about%204%20minutes.%20Season%20with%20salt%20and%20pepper;%20sprinkle%20with%20Parmesan.%20Serve%20with%20bread.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
