Joel Siegel's Sweet Potato Pecan Pie

Ingredientes

  • 3 x Sweet potatoes, cooked and mashed
  • 1 Tbsp. Unsalted butter
  • 2 x Large eggs
  • 1 c. Evaporated lowfat milk
  • 3/4 c. Light brown sugar
  • 1/2 c. Dark corn syrup
  • 1 tsp Vanilla extract
  • 1/2 tsp Grnd ginger
  • 1/2 tsp Cinnamon
  • 1/2 tsp Grnd nutmeg, (I like to grind it fresh)
  • 1/2 tsp Salt
  • 1 c. Coarsely minced pecans
  • 1 pt Whipping cream
  • 3 Tbsp. Confectioners' sugar

Direcciones

  1. Crust:Use your favorite recipe or possibly a ready-made crust. Place crust in lightly greased pie tin.
  2. Filling:Whisk together 1 c. of sweet potatoes and 1 Tbsp. butter. In a large bowl beat two Large eggs till well mixed; add in the sweet potatoes to the Large eggs. In a separate bowl, mix together the evaporated lowfat milk, brown sugar, corn syrup, vanilla, ginger, cinnamon, nutmeg, and salt, then add in to the sweet potato mix and mix well. Pour this combined mix into the pie crust.
  3. Sprinkle 1 c. minced pecans proportionately over the top (they may sink into the mix, which's OK). Bake at 375 degrees for 35-45 min (till tester comes out clean). Let pie cold.
  4. To make topping:Whip cream till soft peaks form, then add in confectioners' sugar and continue to whip till stiff peaks form. Use pastry tube with star tip to decorate pie.
