Judias Verdes Con Salsa De Tomate

Ingredientes

  • 2 T extra virgin olive oil
  • 2 cloves crushed garlic
  • 2 lbs. green beans, cut into 1-inch lengths
  • 1 1/2 lbs. canned tomatoes, minced with juice
  • 1 T minced chives
  • 1 bay leaf
  • 1 T pine nuts
  • Salt and pepper to taste
  • 1 T lemon juice

Direcciones

  1. Saute garlic in extra virgin olive oil for 2 min, stirring. Add in beans and cook for 4 min, stirring constantly. Stir in tomatoes with liquid from can and remaining ingredients. Bring to a boil. Reduce heat to low and simmer 25 to 30 min. Remove form heat and throw away bay leaf. Serve at once. Makes 6 servings.
