Receta Juicy Pub-Style Burgers (and a little honesty about being a food blogger today)

My fingertips have been hovering above my keyboard. I'm really not sure where to start this blog post. Bear with me, for just a moment or two as I digress from sharing this juicy burger recipe that I ground myself-- even though I don't even own a meat grinder. (This recipe comes from America's Test Kitchen.)
Inhale. I've been blogging for seven years. Seven wonderful years, that has introduced me to so many wonderful people who love to cook and bake as much as I do. %3C/p%3E%3Cp%3EInhale.%20%20I've%20been%20blogging%20for%20seven%20years.%20%20Seven%20wonderful%20years,%20that%20has%20introduced%20me%20to%20so%20many%20wonderful%20people%20who%20love%20to%20cook%20and%20bake%20as%20much%20as%20I%20do.%20%20I've%20been%20blessed%20to%20attend%20food%20blogger%20festivals,%20and%20I%20have%20been%20able%20to%20rub%20elbows%20with%20celebrity%20chefs%20and%20celebrity%20food%20bloggers.%20%20I've%20enjoyed%20some%20great%20perks--%20like,%20when%20the%20UPS%20truck%20shows%20up%20with%20kitchen%20tools%20or%20foods%20for%20me%20to%20test%20and%20develop%20recipes%20for.%20%20How%20could%20I%20not%20love%20that?!!%20%20Food%20blogging%20has%20been%20my%20creative%20outlet,%20and%20has%20encouraged%20me%20to%20step%20up%20my%20game%20with%20what%20I%20feed%20to%20my%20family.%3C/p%3E%3Cp%3EThere%20was%20a%20time%20when%20I%20would%20make%20some%20extra%20pocket%20money,%20that%20I%20used%20to%20pay%20website%20designers,%20%20or%20to%20purchase%20cookware%20or%20gourmet%20ingredients.%20%20But,%20in%20recent%20times,%20the%20food%20blog%20community%20has%20changed%20a%20lot.%20%20It's%20become%20more%20competitive,%20and%20I%20don't%20make%20as%20much%20extra%20cash%20as%20I%20once%20did.%20It%20seems%20that%20I've%20reached%20a%20fork%20in%20the%20road,%20where%20I%20feel%20a%20little%20left%20behind%20(and%20somewhat%20guilty)%20in%20maintaining%20regular%20food%20blog%20posts.%20%20In%20short,%20I%20have%20broken%20a%20few%20of%20the%20Golden%20Rules%20of%20having%20a%20successful%20food%20blog,%20within%20the%20last%20year%20or%20so.%3C/p%3E%3Cp%3EWhat%20rule%20is%20that,%20you%20might%20wonder?%3C/p%3E%3Cp%3EI've%20been%20blogging%20rather%20infrequently--%20sometimes%20with%20two%20weeks%20of%20no%20blog%20posts%20being%20posted.%20%20This,%20I've%20been%20told,%20can%20cause%20a%20loss%20of%20readership.%20%20By%20my%20recent%20stats,%20I%20can%20see%20this%20is%20happening.%20%20It's%20discouraging,%20for%20me,%20because%20I%20cherish%20each%20and%20every%20person%20who%20has%20faithfully%20been%20reading%20my%20food%20bog.%20%20I%20so%20enjoy%20visiting%20my%20favorite%20food%20blogs,%20and%20discovering%20new%20ones.%20I%20spend%20at%20average%20of%202%20hours%20(or%20more)%20%20to%20edit%20and%20organize%20my%20food%20photos,%20and%20to%20write%20the%20blog%20post.%20%20%20I%20have%20a%20full-time%20job%20that%20I%20love,%20but%20it%20has%20become%20more%20and%20more%20demanding%20of%20my%20time%20and%20energy.%3C/p%3E%3Cp%3ESo,%20%20I%20had%20to%20make%20a%20choice.%20I%20chose%20to%20spend%20more%20of%20my%20time%20focusing%20on%20my%20family,%20my%20health,%20my%20job%20and%20less%20time%20on%20social%20media.%20%20That,%20my%20friends,%20is%20another%20Golden%20Rule%20that%20I've%20broken%20in%20the%20Food%20Blogger%20community.%20The%20most%20successful%20food%20bloggers%20don't%20only%20have%20beautiful%20photos%20and%20recipes,%20but%20they%20are%20very%20active%20on%20Twitter,%20Facebook%20and%20blog%20more%20than%20once%20a%20week--%20some%20blog%20every%20day!%3C/p%3E%3Cp%3EThank%20you%20to%20those%20of%20you%20who%20remain%20faithful%20readers%20of%20my%20food%20bog.%20%20I%20have%20no%20immediate%20plans%20to%20quit%20food%20blogging%20altogether..%20%20%20I%20won't%20allow%20statistics%20to%20make%20me%20feel%20like%20a%20failure.%20%20I%20will%20continue%20to%20share%20the%20simple%20food%20(and%20desserts)%20that%20I%20make%20for%20my%20family%20and%20friends%20when%20I%20can.%20%20One%20day,%20I'll%20be%20able%20to%20retire.%20Then,%20maybe,%20I%20can%20make%20this%20food%20blog%20my%20full-time%20job%20and%20be%20rich!%20(Just%20kidding/wishing%20on%20that%20last%20thought.)%3C/p%3E%3Cp%3EThank%20you%20for%20listening.%20%20Muwahhh!%20%20Exhale.%3C/p%3E%3Cp%3EOkay...%20on%20with%20this%20recipe:%3C/p%3E%3Cp%3EIt%20is%20highly%20unusual%20for%20me%20to%20eat%20burgers%20from%20a%20big%20chain%20take-out%20place-unless,%20there's%20a%20good%20Mom%20and%20%20Pop%20place%20that%20char-grills%20their%20burgers.%20Then,%20I'm%20in!%3C/p%3E%3Cp%3EWhile%20you%20don't%20need%20a%20meat%20grinder,%20you%20do%20need%20a%20food%20processor%20to%20make%20this%20recipe.%20You%20also%20need%20to%20buy%20Sirloin%20Steak%20Tips.%20%20Maybe%20you've%20seen%20this%20cut%20labeled%20as%20Round%20Tip%20Steak,%20Tip%20Steak,%20Sandwich%20Steak,%20Ball%20Tip%20Steak,%20Breakfast%20Steak,%20or%20Knuckle%20Steak?%3C/p%3E%3Cp%3EEven%20better,%20use%20Flap%20Meat.%20%20Flap%20Meat?%20%20It%20doesn't%20sound%20pretty,%20does%20it?%20%20%20Think%20of%20Flap%20Meat%20as%20being%20an%20alternative%20to%20Skirt%20Steak.%20%20May%20you've%20seen%20it%20labeled%20as%20Faux%20hanger?%20%20I%20buy%20mine%20at%20Costco%20(and%20it's%20reasonably%20priced),%20and%20freeze%20it%20in%20smaller%20portions.%3C/p%3E%3Cp%3EYou%20simply%20cut%20the%20meat%20into%20long%20strips,%20and%20then%20into%20smaller%20chunks.%20%20Then,%20freeze%20them%20for%20about%2030%20minutes--%20just%20until%20firm%20and%20hardening%20around%20the%20edges,%20but%20still%20pliable.%3C/p%3E%3Cp%3EThen%20you%20pulse%20the%20meat%20(one%20quarter%20at%20a%20time)%20until%20finely%20ground.%20%20Next%20you%20add%20some%20melted%20butter%20(to%20encourage%20browning)...%3C/p%3E%3Cp%3EThen,%20you%20add%20some%20pepper%20and%20work%20it%20through%20the%20meat%20with%20a%20fork%20(don't%20overwork%20the%20meat,%20or%20your%20burger%20will%20be%20tough).%20%20Last,%20shape%20the%20burgers%20into%20four%20patties.%3C/p%3E%3Cp%3EAmerica's%20Test%20Kitchen's%20recipe%20is%20written%20to%20sear%20the%20patties%20in%20a%20frying%20pan,%20and%20then%20transferring%20the%20patties%20to%20a%20baking%20sheet.%20The%20meat%20is%20finished%20off%20in%20the%20oven%20for%203-6%20minutes,%20thereby%20ensuring%20a%20juice%20burgers.%3C/p%3E%3Cp%3EHowever...%3C/p%3E%3Cp%3EIt%20was%20a%20hot%20day,%20and%20I%20chose%20to%20grill%20these%20on%20a%20gas%20grill.%20%20The%20meat%20is%20a%20little%20loose,%20so%20flipping%20them%20over%20took%20some%20care%20so%20that%20they%20wouldn't%20fall%20apart.%3C/p%3E%3Cp%3EI%20made%20a%20quick%20sauce%20of%20mayonnaise,%20ketchup%20and%20sweet%20pickle%20relish.%20I%20also%20made%20Buttermilk%20Fried%20Onion%20Rings%20%20and%20served%20the%20burgers%20on%20store-bought%20Brioche%20Hamburger%20Buns.%3C/p%3E%3Cp%3EIf%20you're%20feeling%20ambitious,%20you%20can%20make%20these%20homemade%20hamburger%20buns%20in%20an%20hour!%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
