Justin's Apple Cinnamon White CakePerfect fall coffee cake! Warm cinnamon and juicy apples make it special.

The cake smells wonderful baking. Only thing I did differently was used 1 1/2 apples in the batter but placed thinly sliced apples in the center along with the cinnamon sugar.
I used Granny Smiths, but I guess any apple will do. I'd like to try it again with a sweeter, juicier apple as I think the flavor would be improved. Justin didn't say which variety he used, so I went to one of my standby cooking apples. I really prefer Rome but my store didn't have them, hence the Granny
Smiths.
Cinnamon sugar in the centerThe cake is very sweet and perfect with coffee. I didn't serve this warm, but I imagine it's just marvelous if you serve it that way.
Justin's Apple Cinnamon White Cake
- 1/3 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 cup (1 stick) unsalted butter, softened
- 2/3 cup white sugar
- 2 eggs
- 1 1/2 tsp vanilla
- 1 1/2 cup flour
- 1 3/4 tsp baking powder
- 1/2 cup milk
- 1-2 apples, peeled & chopped
Preheat oven to 350 degrees F. Spray or grease a 9x5x3-inch loaf pan.
In a small bowl, mix the brown sugar and cinnamon; set aside.
In another bowl, mix the flour and baking powder; set aside.
In a large bowl, beat butter and sugar until light and fluffy.
Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Stir in the flour, mixing well. Add the milk and beat until smooth. Fold in the apples.
Spread 1/2 of the batter in the pan. Top with 1/2 of the brown sugar/cinnamon mixture. Swirl through batter. At this point, I added a layer of thinly sliced apple as well.
Spread remaining batter over the top. Top with remaining brown sugar/cinnamon mixture.
Bake at 350 degrees F for 40-50 minutes or until a toothpick inserted in the center comes out clean.
May either be served warm or completely cooled.
About 12 servings.
