Kahlúa liqueur

Rich and tasty caramel coffee flavored liqeuer makes a great Christmas gift. Pour it into pretty bottles and stick a vanilla bean in the bottle to add a classy touch.

Ingredientes

  • 3 cups sugar
  • 4 cups water
  • 1/4 cup instant coffee granules
  • 3 tbs vanilla extract
  • 2 1/2 cups vodka

Direcciones

1. Dissolve sugar in water over medium high heat.
2. Add instant coffee granules and bring to the boil. Reduce heat to simmer. Stir every 10-15 minutes as needed for 1 ½ - 2 hours. Mixture will be reduced to a liquid syrup. Remove from heat and allow to cool for 5 minutes.
3. Stir in vanilla and allow to cool another 15 - 30 minutes*.
4. Stir in vodka.
5. Pour the liqueur into dark glass bottles and keep out of direct light. Leave to stand in a cool dark place for at least couple of weeks.
Easy tips
6. *If mixture has crystallized a little, the vodka will break it back down as long is it is still partial liquid. If you allow it to cool too long it will harden too much. If this happens, simply reheat the syrup and add vodka when it's somewhat cooled down but not hard.
7. The liqueur tastes best when left in a cool dark place for a few months because it gets smoother with age. You may keep it in the fridge or out of it.
8. It is really important to simmer the water/sugar/coffee mixture for at least 1-2 hours. This alters and deepens the flavor of the sugar and coffee as the sugar actually caramelizes. Also, as the mixture simmers (losing some of the water and caramelizing) a thin syrup, great for the overall consistency of the drink, forms.
