Kale And Tomatoes With Pasta Shells

Ingredientes

  • 2 Tbsp. extra virgin olive oil
  • 1 lrg yellow onion, diced
  • 2 x cloves garlic, chopped
  • 1/4 c. red wine or possibly more to taste
  • 1 x red bell pepper, diced
  • 1 tsp salt Freshly grnd pepper
  • 1 pt cherry tomatoes, halved, or possibly 2 large tomatoes, minced, with liquid
  • 1 bn kale leaves, coarsely minced
  • 2 Tbsp. fresh basil, coarsely minced
  • 1 lb medium shells, farfalle or possibly penne, cooked according to pkg directions Grated Parmesan cheese

Direcciones

  1. Heat oil in large skillet over medium heat. Add in onion and garlic; cook till soft and fragrant, about 3 min. Add in wine, bell pepper, salt and pepper to taste. Cook till bell pepper softens, about 5 min. Add in tomatoes; cook 2 min.
  2. Add in kale. Leaves will overflow, but try to mix as well as you can; kale will shrink. Cook till leaves are soft but not soggy, about 6 min. Add in basil; cook 1 minute.
  3. Toss kale-tomato mix with pasta. Season with more salt and pepper if you like. Top with cheese.
