Ingredientes

  • 1 med onion, minced
  • 1 x rib celery, minced
  • 1 lrg carrot, peeled and minced
  • 1 tsp paprika
  • 1 x bay leaf
  • 4 c. vegetable stock or possibly water
  • 14 ounce canned diced tomatoes, liquid removed
  • 3 c. minced kale
  • 3 c. cooked or possibly canned black-eyed peas, rinsed if canned
  • 2 Tbsp. wheat-free tamari
  • 3 c. cooked brown rice Salt and freshly grnd black pepper, to taste

  5. Add in peas and tamari and simmer 5 min. Just before serving, add in rice and heat through. Season with salt and pepper.
