Receta Kale, White Bean and Sausage Soup
I love making big batches of soup, we have if for dinner with a big salad and and freeze the rest for a night when there isn’t much time to cook. I based this recipe on one that I have for escarole, beans and sausage. I like the texture that the kale adds. It’s a hearty soup, loaded with beans, kale and tons of flavor.
Kale, White Bean and Sausage Soup
INGREDIENTS
- 1/2 Pound of Turkey or Pork Sausage
- 1 Bunch of Kale - Chopped
- 3 to 4 Cloves of Chopped Garlic
- 1 Quart of Low Sodium Chicken Broth
- 1 Cup White Wine
- 2 Cups White Beans
- Dash of Hot Pepper Flakes (optional)
- Cooked Farro (Optional)
INSTRUCTIONS
Brown the Sausage in the soup pot and breaking up into bits as it cooks- and remove
Add garlic and kale - saute for about 5 minutes
Add the sausage back to the pot
Add chicken broth and wine, simmer for 20 minutes
Add the beans and pepper flakes, cook for another 10 minutes
Serve over Farro
