Kangaroo Fillet Steaks

Ingredientes

  • 2 x 200-220 g Kangaroo Loin Fillets
  • 30 gm butter
  • 1 clv garlic
  • 4 x minced green shallots
  • 1 Tbsp. red currant jelly
  • 1 Tbsp. dry sherry
  • 1/2 c. fresh cream

Direcciones

  1. Heat butter in large heavy frying pan. Gently fry garlic and shallots till tender. Remove from pan, leaving butter.
  2. Turn heat up to warm, and quickly sear both sides then fry kangaroo fillets till red inside and brown outside, turning only once.
  3. Set aside fillets to rest.
  4. Return garlic and shallots to warm pan along with red currant jelly and sherry.
  5. With mix boiling, add in cream and stir till of even consistency. Don't allow to boil.
  6. Serve fillets with sauce poured over.
