.%3C/p%3E%3Cp%3EI%20have%20earlier%20posted%20the%20recipe%20of%20her%20mutsch%20which%20can%20be%20found%20here,%20(she%20makes%20it%20the%20way%20my%20father's%20family%20have%20always%20made%20it%20in%20Kashmir,%20having%20learned%20their%20ways%20as%20a%20young%20bride)%20however%20I%20recently%20came%20across%20another%20recipe%20of%20mutsch,%20probably%20a%20purer%20version%20at%20a%20kashmiri's%20blog-%20Anita%20of%20A%20Mad%20Tea%20Party,%20she%20lists%20them%20amongst%20the%205%20things%20to%20eat%20before%20you%20die%20:),%20and%20rightly%20so!%3C/p%3E%3Cp%3EBoth%20me%20and%20mom%20were%20eager%20to%20give%20it%20a%20go,%20the%20results%20were%20very%20good,%20though%20I%20am%20probably%20more%20partial%20to%20my%20mom's%20recipe%20since%20I%20have%20grown%20up%20with%20it%20and%20the%20addition%20of%20yogurt%20gives%20the%20mutsch%20a%20delicious%20tang!%3C/p%3E%3Cp%3EMutsch%20%20%20(recipe%20from%20here)%3C/p%3E%3Cp%3EFor%20the%20meatballs%3C/p%3E%3Cp%3ETo%20make%20%20the%20meatballs%3C/p%3E%3Cp%3EPlace%20the%20ground%20mutton%20in%20a%20large%20mortar.%20Powder%20the%20cloves%20and%20the%20black%20cardamom%20(keep%20the%20outer%20husk%20aside)%20and%20add%20to%20the%20mince.%3C/p%3E%3Cp%3EAnd%20the%20rest%20of%20the%20ingredients%20and%20pound%20well.%20Pinch%20off%20small%20portions,%20and%20shape%20into%20oblongs%20(I%20give%20it%20a%20gentle%20roll%20between%20the%20palms).%20%20Let%20rest%20for%2020-30%20min.%3C/p%3E%3Cp%3EI%20added%203%20spoons%20of%20oil%20as%20stated%20in%20the%20original%20recipe%20to%20keep%20the%20mutsch%20soft%3C/p%3E%3Cp%3ETo%20prepare%20the%20gravy:%3C/p%3E%3Cp%3EIn%20a%20heavy%20flat%20bottomed%20pan%20heat%20some%20oil%20(1-2%20T),%20when%20hot%20add%20the%20cloves%20and%20the%20bayleaf,%20dhaniya,%20saunf,%20and%20sonth%20powders,%20as%20you%20add%20the%20red%20chilli%20powder%20keep%20a%20cup%20of%20water%20at%20hand.%20Stir%20quickly%20to%20roast/fry%20the%20spices%20and%20then%20add%20water.%20Add%20another%20cup%20or%20cup%20and%20a%20half%20of%20water.%20Bring%20to%20a%20boil.%3C/p%3E%3Cp%3EGrind%20the%20black%20cardamoms%20and%20add%20to%20the%20pan%20with%20the%20husk%20from%20the%20two%20used%20for%20the%20meatballs.%20Turn%20the%20heat%20to%20medium%20and%20carefully%20and%20gently%20lower%20the%20oblongs%20into%20the%20pan.%20Cover%20and%20let%20simmer%20for%2030-40%20minutes.%20The%20gravy%20will%20have%20reduced%20by%20a%20third%20and%20the%20meat%20will%20be%20done.%20Sprinkle%20a%20half%20teaspoon%20of%20Kashmiri%20garam%20masala%20and%20mix.Serve%20with%20warm%20steamed%20rice%20or%20paranthas.%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20have%20Kashmiri%20garam%20masala:%20pound%20together%20one%20black%20cardamom,%20half%20inch%20piece%20of%20cinnamon,%20and%203%20cloves,%20and%20use.%3C/p%3E%3Cp%3EOTHER%20KASHMIRI%20DELICACIES%20ON%20THIS%20BLOG:%3C/p%3E){kind=link}
