Ingredientes

  • 5 lb medium red-skinned potatoes
  • 1 med white onion finely grated
  • 2/3 c. cool water
  • 1/2 c. distilled white vinegar
  • 1 tsp sugar
  • 1/2 tsp coarse salt
  • 1 c. Hellmann's Mayonnaise Minced parsley (optional garnish) Sliced hard-boiled Large eggs (optional garnish)

Direcciones

  1. Place potatoes in a large pot, and cover with water; bring to a boil. Reduce to a simmer, and cook till soft when pierced with the tip of a knife, about 30 min. Drain, and allow to cold slightly. Peel potatoes, and slice into 1/4-inch-thick slices.
  2. Combine potatoes, onion, water, vinegar, sugar, and salt in a large bowl. Toss gently between two large bowls, trying not to break up potato slices. Let stand for 10 min. Add in mayonnaise; mix gently between two large bowls till well combined and creamy. Chill for at least 2 hrs; the mix will thicken as it stands. Garnish with parsley and/or possibly sliced hard-boiled Large eggs, if you like.
  3. This recipe yields 10 to 12 servings.
