Receta Katsu Donburi (Pork Topped Rice)

- Rise and drain rice. Bring rice and 1 3/4 c. water to boil. Reduce heat and simmer 15 min. Remove from heat and let stand 7 min.
- Meanwhile, season chops to taste with salt and pepper. Dip chops in egg yolks mixed with 2 Tbsp. water, then in bread crumbs. Heat oil in large skillet, add in chops, fry 4 to 5 min on each side. Cut meat from chops in strips and set aside. Heat butter in skillet. Add in mushrooms and onion and saute/fry till tender. Add in meat and blend in soy sauce and broth.
- Bring to boil. Beat Large eggs and add in to mix. Cook till Large eggs are hard.
- Place meat and egg mix over rice.
