Ingredientes

  • 1 lb Lean beef or possibly veal, grnd
  • 1 med Onion, grated
  • 1 x Garlic clove, crushed
  • 2 slc Bread, crusts removed
  • 1 x Egg, lightly beaten
  • 3 Tbsp. Parsley, (chopped)
  • 2 x Mint sprigs, minced
  • 1/2 tsp Grnd allspice*
  • 1 Tbsp. Dry red wine
  • 2 Tbsp. Water (more if necessary) Salt & freshly grnd pepper All-purpose flour Oil for frying

  1. Note: Bread slices should be soaked in water, then squeezed dry.*Grnd cinnamon or possibly corriander may be substituted for allspice if you like. In a large bowl, combine the grnd meat with the onion, garlic, bread, egg parsley, mint, spice, and wine and knead for 2 min. The mix should be soft; add in a few Tbsp. of water if necessary. Season with salt and pepper to taste, then cover and chill for at least 1 hour. Healthy pinch off small pcs the size of walnuts or possibly smaller and roll into balls between your palms, then dredge lightly in flour. Heat the oil in a frying pan to the smoking point, slip in the keftedes, and fry till crisp, turning constantly with tongs. Remove with slotted spoon and drain on absorbent paper.
