%20Having%20lived%20all%20my%20pre-married%20life%20in%20the%20Middle%20East%20where%20it's%20almost%20always%20summer,%20bearing%20this%20icy%20cold%20winter%20is%20like%20a%20nightmare%20for%20me.%20But%20on%20the%20bright%20side,%20Spring%20is%20just%20a%20few%20weeks%20away%20and%20I'm%20eagerly%20waiting%20for%20it.%3C/p%3E%3Cp%3EI%20love%20the%20way%20we%20can%20see%20the%20changes%20in%20the%204%20seasons%20here%20in%20US.%20I%20still%20remember%20how%20my%205th%20grade%20teacher%20used%20to%20describe%20her%20US%20vacations%20with%20so%20much%20pride%20and%20I%20guess%20we%20were%20studying%20something%20related%20to%20seasons%20in%20geography%20and%20she%20used%20to%20draw%20such%20a%20beautiful%20picture%20in%20our%20minds%20of%20how%20Spring,%20Summer,%20Autumn%20and%20Winter%20looks%20so%20picture%20perfect%20in%20this%20part%20of%20the%20world%20and%20for%20us%20little%20kids,%20it%20was%20like%20dreaming%20of%20dreamland%20:-)%20And%20I'm%20living%20in%20it%20now%20...lol!!%3C/p%3E%3Cp%3EHere%20are%20a%20few%20glimpses%20of%20this%20winter%20I%20captured%20on%20my%20Iphone.%3C/p%3E%3Cp%3EOn%20a%20snowy%20day,%20a%20shot%20from%20our%20patio.%3C/p%3E%3Cp%3EBefore%20heading%20to%20office%20one%20fine%20morning,%20the%20snow%20clad%20trees%20looked%20so%20pretty%20I%20couldn't%20resist%20taking%20a%20snap.%3C/p%3E%3Cp%3EAnother%20quick%20pic%20taken%20before%20dropping%20lil'Appu%20at%20his%20daycare...he%20wasn't%20very%20happy%20with%20all%20the%20cold%20wind%20on%20his%20face%20first%20thing%20in%20the%20morning...but%20was%20a%20darling%20to%20pose%20with%20Papa%20:-)%20This%20is%20one%20of%20my%20favorite%20pics.%3C/p%3E%3Cp%3EThe%20best%20ways%20to%20beat%20this%20cold%20is%20to%20actually%20take%20part%20in%20it.%20Do%20winter%20activities%20like%20snow%20tubing,%20skiing,%20ice%20skating%20,%20make%20a%20snowman%20or%20simply%20throw%20snowballs%20at%20each%20other.%20Though%20I%20haven't%20done%20any%20of%20this%20b'coz%20I%20don%E2%80%99t%20think%20I%20have%20the%20courage%20to%20stand%20out%20in%20the%20cold%20for%20that%20long,%20even%20with%205%20layers%20of%20winter%20cloths%20on,%20it%20definitely%20sounds%20like%20fun%20and%20many%20of%20my%20friends%20are%20enjoying%20it%20with%20their%20families.%20Maybe%20next%20year%20when%20lil'Appu%20is%20a%20bit%20bigger%20and%20may%20actually%20enjoy%20playing%20in%20the%20snow,%20I%20might%20dare%20to%20try%20making%20a%20snowman%20:-)%3C/p%3E%3Cp%3EAnother%20good%20way%20to%20beat%20this%20cold%20is%20eat%20some%20comforting%20homemade%20food.%20I%20won't%20lie%20to%20you%20by%20saying%20I%20only%20eat%20homemade%20food,%20I%20do%20enjoy%20my%20share%20of%20take-outs%20and%20dine-ins%20at%20restaurants.%20But%20nothing%20beats%20homemade%20stuff,%20does%20it?%3C/p%3E%3Cp%3EChicken%20fry%20is%20a%20rare%20treat%20at%20our%20home%20as%20I%20usually%20never%20make%20stuff%20that%20includes%20frying%20in%20a%20lot%20of%20oil.%20Most%20of%20the%20time%20it'll%20be%20grilled%20or%20baked%20chicken%20or%20chicken%20curry.%20But%20sometimes%20frying%20adds%20a%20certain%20flavor%20and%20taste%20that%20cannot%20be%20obtained%20by%20grilling%20or%20baking.%20And%20how%20about%20a%20typical%20Keralite%20version%20%E2%80%93%20fried%20in%20coconut%20oil?%20Delicious!!%3C/p%3E%3Cp%3EMy%20mom%20never%20used%20too%20much%20coconut%20oil%20in%20her%20cooking%20for%20as%20long%20as%20I%20know,%20so%20even%20I%20got%20used%20to%20the%20habit%20of%20using%20vegetable%20oil%20for%20my%20cooking.%20But%20the%20memories%20of%20the%20taste%20of%20food%20that%20we%20ate%20while%20vacationing%20in%20Kerala%20makes%20my%20mouth%20water%20and%20crave%20for%20some%20typical%20naadan%20kerala%20style%20food%20cooked%20in%20this%20aromatic%20and%20flavorful%20oil.%3C/p%3E%3Cp%3EAnd%20so,%20when%20I%20prepared%20the%20Kappa%20Masala%20with%20cilantro-coconut%20chutney%20for%20a%20weekend%20lunch%20,%20I%20decided%20to%20pair%20it%20with%20some%20spicy%20chicken%20legs%20fried%20in%20coconut%20oil%20and%20garnished%20with%20crunchy%20curry%20leaves.%20The%20taste%20is%20beyond%20explanation%20and%20paired%20extremely%20well%20with%20the%20Kappa%20and%20chammanthi.%20(I%20shallow%20fried%20the%20chicken%20legs,%20you%20can%20deep%20fry%20if%20you%20want%20to%20:-)%20)%3C/p%3E%3Cp%3EKerala%20style%20Spicy%20Chicken%20Fry%20in%20Coconut%20Oil%3C/p%3E%3Cp%3EYou%E2%80%99ll%20need%3C/p%3E%3Cp%3EChicken%20legs%20%E2%80%93%204%3C/p%3E%3Cp%3ERed%20chilli%20powder%20%E2%80%93%201%20tblsp%3C/p%3E%3Cp%3ECurry%20leaves%20%E2%80%93%201-2%20sprigs%20(about%208-10%20leaves)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Wash%20and%20clean%20the%20chicken%20legs%20and%20pat%20them%20dry%20with%20a%20paper%20towel.%20Make%202-3%20slits%20over%20the%20chicken%20legs%20with%20a%20sharp%20knife.%3C/p%3E%3Cp%3E2.%20Make%20a%20smooth%20paste%20with%20the%20spice%20mix%20and%20salt.%20Do%20a%20gentle%20taste%20test%20of%20the%20mix%20to%20make%20sure%20its%20seasoned%20well.%20(%20Be%20careful%20%E2%80%93%20its%20spicy!!)%3C/p%3E%3Cp%3E3.%20Apply%20the%20spice%20marinade%20over%20the%20chicken%20legs%20evenly%20making%20sure%20to%20get%20the%20marination%20in%20the%20slits%20and%20all.%20Refrigerate%20and%20marinate%20for%2015-20%20minutes.%3C/p%3E%3Cp%3E4.%20Heat%20the%20coconut%20oil%20in%20a%20frying%20pan%20and%20fry%20the%20curry%20leaves%20until%20crunchy%20and%20keep%20it%20aside.%3C/p%3E%3Cp%3E5.%20Now%20fry%20the%20chicken%20legs%20in%20the%20same%20oil%20until%20its%20well%20done%20and%20browned%20slightly%20on%20both%20sides.%3C/p%3E%3Cp%3E6.%20Garnish%20and%20serve%20with%20the%20fried%20curry%20leaves%20on%20top.%3C/p%3E%3Cp%3EFrying%20the%20curry%20leaves%20first%20was%20actually%20done%20by%20mistake,%20but%20it%20added%20a%20lovely%20curry%20leaf%20essence%20to%20the%20oil%20which%20gets%20absorbed%20by%20the%20chicken%20legs%20while%20frying%20,%20so%20I%20modified%20my%20original%20recipe%20to%20do%20that%20as%20the%20first%20step.%20Make%20sure%20you%20do%20not%20burn%20the%20curry%20leaves%20:-)%3C/p%3E%3Cp%3EIt%E2%80%99s%20a%20simple%20preparation.%20The%20same%20marination%20can%20be%20used%20while%20grilling%20or%20baking.%20And%20the%20coconut%20oil%20imparts%20so%20much%20flavor%20,%20if%20you%20haven%E2%80%99t%20tried%20it%20yet,%20then%20you%20must!%3C/p%3E%3Cp%3EOh%20and%20before%20I%20stop%20rambling,%20I%20wanted%20to%20share%20the%20joy%20of%20my%20blog%20hitting%20100,000+%20pageviews%20Yaaayyyyy!!!%20Thank%20you%20all%20for%20supporting%20me%20and%20my%20blog%20and%20sharing%20such%20lovely%20comments%20and%20feedback%20.%20I%E2%80%99ll%20try%20to%20do%20my%20best%20to%20give%20you%20quality%20posts%20and%20delicious%20recipes%20collected%20from%20my%20family,%20friends%20,%20books%20and%20web%20+%20some%20of%20my%20own%20creations%20;-)%3C/p%3E%3Cp%3EI%E2%80%99m%20currently%20active%20on%20Facebook%20,%20Pinterest,%20Twitter%20and%20Google+%20(I'm%20still%20trying%20to%20learn%20Instagram,%20so%20mayb%20that%20too%20once%20I'm%20done%20figuring%20it%20out).%20Do%20keep%20in%20touch%20with%20me%20by%20Following%20me%20and%20let%E2%80%99s%20be%20friends!!%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
