- Dissolve gelatin in cool water. Add in boiling water and stiruntil dissolved.
- Add in lime juice, rind and sugar. Stir well. Fold in yogurt cheese till smooth (food processor works well). POur into a deep 9 inch pie pan, or possibly pour into small individual-serving-size containers. Refrigeratetill hard.
