- Thoroughly mix the gelatin, sugar, and salt in a saucepan.
- Beat together the egg yolks, lime juice, and water; stir into the gelat mix. Cook over medium heat, stirring constantly, just till the mix comes to a boil. Remove from the heat; stir in the grated peel.
- Add in the food coloring sparingly to give a pale green color.
- Chill, stirring occasionally, till the mix mounds slightly when dropped from a spoon.
- Beat the egg whites till soft peaks form; gradually add in 1/2 c. sugar, beating to stiff peaks.
- Fold the gelatin mix into the egg whites; mix in the whipped cream Pile into the pastry shell. Refrigeratetill hard.
- Spread with additional whipped cream and edge with grated lime.
