Try this Key Lime and Rum Bundt Cake so your taste buds can do the happy dance. The first time I made this way back in 2009 before blogging and I have no idea where I found it. I attempted to juice key limes. Ha! Talk about mission impossible. Zesting them isn’t a big hassle but since my first try, I decided to buy key lime juice from now on. This was also my maiden voyage cake with my new oven and I couldn’t have been happier. I used my Heritage Bundt pan and the swirls provided a nice resting place for my lime slices. I sliced the limes and laid them on a paper towel to absorb a little of the juice. That was just my thing. A little lime juice seeping into the cake is no big deal. The tang from the lime zest and juice combined with the slightly sweet taste of the rum is a little taste of the tropics. Due to the alcohol in this cake, it isn’t one for the kiddos. As an alternative to the rum, you can use 1 TBS of rum extract and 3 TBS of water. Helpful Hints for Baking a Key Lime Rum Bundt and Other Cakes While reading a scratch cake recipe I’m quite sure it often says when adding flour and liquid that you should begin and end with flour. Have you ever wondered why or do you just go with the flow? The reason is that mixing any liquid with flour causes gluten to form. That’s almost like asking for a tough cake. By adding some of the dry ingredients to the previously creamed, which are typically butter and sugar, the flour is coated with fat which prevents the gluten formation when you add liquid. Here’s the method used the most. 3 additions of flour and 2 of liquid. Flour, liquid, flour, liquid, flour. Over many years of making frosting I’ve discovered that sifting powdered sugar helps to ensure a smoother glaze or frosting. Granted, it’s a painstaking task but well worth the effort. When sifting, powdered sugar can be staticky (I think I just made up a word). Sifting over a large bowl helps to contain it. A vanilla bean or pistachio gelato would be a great pairing with this cake. It’s definitely a keeper and I look forward to making it again before the autumn leaves start falling. Ingredients 1 cup butter, room temperature ½ cup shortening 3 cups sugar 6 large eggs, room temperature 3 cups all-purpose flour ½ baking powder ⅛ tsp salt 1 cup whole milk 1 tsp vanilla 1 and ½ tsp lime zest ¼ cup light rum Key Lime Rum Glaze 1 and ½ cups confectioners' sugar, sifted 2 TBS lime juice 1 ½ TBS light rum ½ tsp vanilla Lime Slices for garnish (optional) Instructions Preheat oven to 325° F and prepare a 10-inch (12 cup) Bundt pan for baking. Sift the flour, baking powder, and salt then set aside. Next, cream butter and shortening at medium speed until thoroughly combined and smooth. Gradually add sugar, beating at medium speed until light and fluffy. Add eggs, one at a time, beating until blended after each addition. Now add flour mixture to butter mixture alternately with milk, beginning and end with flour mixture. Beat at low speed until just blended after each addition. Stir in vanilla, lime zest, light rum and lime juice, then spoon batter into prepared pan. Bake at 325° F for 1 hour 25 to 30 minutes or until cake tests done. Cool cake in pan on a wire rack 25 to 30 minutes before inverting onto a serving tray to cool completely. While cake is cooling prepare the glaze. Mix glaze ingredients together with a whisk and drizzle or spoon over cake. Store covered on countertop for 3 days or in refrigerator up to 7 days.
