Kicked Up Pasta Rags With Vodka Sauce

Ingredientes

  • 1/4 lb bacon cut 1/2" pcs
  • 2 c. finely-minced yellow onions
  • 1/2 tsp crushed red pepper
  • 2 Tbsp. chopped garlic
  • 1 can crushed tomatoes - (14 ounce)
  • 1/2 c. fresh or possibly frzn green peas
  • 1 c. vodka
  • 1 c. heavy cream
  • 1/3 c. minced basil
  • 4 sht fresh pasta - (abt 1 lb) torn into rags abt 3" by 1" each Grated Parmesan (optional), for serving

Direcciones

  1. Bring a large pot of salted water to a boil.
  2. In a skillet, cook the bacon over medium-high heat till the fat is rendered and just beginning to brown, about 4 min. Add in the onions and crushed red pepper and saute/fry till soft and slightly caramelized, about 6 min. Add in the garlic and cook for 1 minute. Add in the tomatoes and stir well to combine. Cook for 2 min, stirring. Add in the vodka and cook till slightly reduced, 3 to 4 min. Add in the peas and cream, and cook, till thickened, about 2 min. Remove from the heat and stir in the basil.
  3. Cook the pasta in the boiling water till just al dente, about 2 min. Drain in a colander. Add in to the pasta sauce, and toss to combine. Serve immediately with grated Parmesan, if you like.
  4. This recipe yields 4 servings.
