%20Probably%20aren't%20German,%20and%20b.)%20Haven't%20lived.%3C/p%3E%3Cp%3EKnoephla%20soup%20is%20a%20very%20simple%20soup%20that%20typically%20contains%20potatoes%20and%20knoephla,%20which%20are%20dumplings.%20This%20soup%20is%20a%20staple%20at%20a%20local%20diner,%20which%20sells%20it%20either%20by%20the%20generous%20bowl%20or%20the%20generous%20bucket.%20Yes,%20you%20can%20get%20your%20knoephla%20soup%20in%20a%20big%20ol'%20plastic%20pail.%3C/p%3E%3Cp%3EHowever,%20the%20diner%20doesn't%20deliver,%20and%20I%20don't%20always%20feel%20like%20leaving%20home%20when%20I'm%20sick.%20So%20this%20is%20my%20attempt%20to%20replicate%20--%20and%20perhaps%20even%20improve%20on%20--%20the%20hubby's%20favorite.%3C/p%3E%3Cp%3EThis%20attempt%20was%20completely%20off-the-cuff;%20all%20I%20know%20is%20that%20the%20diner%20uses%20potatoes,%20dumplings,%20celery,%20and%20cream%20of%20chicken%20soup%20(because%20those%20little%20bits%20of%20chicken%20are%20unmistakable).%20I%20did%20swap%20out%20the%20celery%20for%20some%20carrot,%20because%20the%20hubby%20does%20not%20like%20celery%20and%20the%20little%20man%20loves%20him%20some%20carrot.%20And,%20because%20I'm%20the%20world's%20slowest%20potato-peeler,%20I%20used%20thin-skinned%20yellow%20potatoes%20(Klondike%20Goldust,%20to%20be%20exact)%20and%20left%20the%20skins%20on.%3C/p%3E%3Cp%3EThe%20results?%20Very,%20very%20similar%20to%20the%20hubby's%20favorite.%20In%20fact,%20I%20thought%20it%20was%20better.%20But%20I%20might%20be%20biased.%3C/p%3E%3Cp%3EKnoephla%20Soup%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3E1.%20Heat%20butter%20in%20a%20soup%20pot%20over%20medium%20heat.%20Saute%20shallot%20for%20about%201%20minute,%20and%20then%20add%20carrot%20and%20potato.%20Sprinkle%20with%20salt%20and%20pepper%20and%20add%20bay%20leaf.%20Cook%20about%202%20minutes.%3C/p%3E%3Cp%3E2.%20Add%20soup,%20water,%20and%20broth,%20and%20stir%20well.%3C/p%3E%3Cp%3E3.%20Bring%20soup%20to%20a%20boil,%20and%20then%20add%20dumplings.%3C/p%3E%3Cp%3EI%20cheated-ed-ed%20and%20used%20frozen%20dumplings.%20But%20I%20used%20the%20time%20that%20I%20saved%20to%20reorganize%20my%20closet,%20so%20now%20the%20little%20man%20can%20store%20toys%20in%20his%20closet%20instead%20of%20my%20shoes.%3C/p%3E%3Cp%3EWelcome%20to%20Angel%20in%20the%20Kitchen,%20where%20the%20little%20details%20make%20a%20difference.%3C/p%3E%3Cp%3E4.%20Reduce%20heat%20to%20medium-low.%20Cover%20and%20simmer%20until%20dumplings,%20potatoes,%20and%20carrots%20are%20tender,%20about%2020-30%20minutes.%3C/p%3E%3Cp%3E5.%20Remove%20pot%20from%20heat%20and%20stir%20in%20cream.%20Season%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E(Just%20a%20quick%20note%20that%20if%20you're%20reheating%20leftover%20soup,%20do%20so%20slowly%20and%20carefully,%20so%20the%20cream%20doesn't%20curdle.)%3C/p%3E){kind=link}
