Ingredientes

  • 1/4 c. oil
  • 2 med onions sliced
  • 3 x garlic cloves chopped
  • 4 lb stew meat
  • 1 can tomatoes - (28 ounce) with liquid
  • 1 c. dry red wine
  • 2 Tbsp. Worcestershire sauce
  • 1 x bay leaf
  • 1 tsp basil crushed
  • 1 Tbsp. minced fresh parsley Salt to taste Freshly-grnd black pepper to taste
  • 2 x potatoes diced
  • 3 lb carrots diced
  • 3 x celery stalks diced
  • 1 can corn - (16 ounce) liquid removed
  • 1 can lima beans - (15 ounce) liquid removed

Direcciones

  1. In a large Dutch oven, heat oil and saute/fry onions and garlic till soft. Add in meat and brown on all sides. Add in tomatoes, wine, Worcestershire sauce, bay leaf, basil, parsley, salt and pepper. Simmer, partially covered, for 1 hour.
  2. In the meantime, combine potatoes, carrots and celery in a saucepan with 1 c. water and cook till a little tender but still hard. After meat has simmered for an hour, add in these vegetables and the remaining ingredients. Continue cooking till meat is tender.
  3. This recipe yields 8 servings.
